I remember when I was a kid (in New England) we made apple pies (occasionally the crisps) with Cortland apples, which have that perfect balance of sweet and tart, keep their crispness during baking, and taste better than any other apple combination! However, I don’t see them outside of NE. Yes, gotta have vanilla ice cream! But you’re just showing off in this one! 😋🙏❤️

Gaaaah, Im making this and forgot to add the pecans to the topping -_- Either way, I'll add them on top after baking, no problem. Edit: I used this recipe as a base and made a few changes. Halved the recipe for a small pan. Added a splash of lemon juice to the apples, along with a splash of vanilla, and a splash of bourbon. Swapped the flour in the apples for cornstarch. The end result was sooooooooo delicious!

Hands in bowl, and rub the flour and butter between your thumbs and index and middle fingers, until the mixture resembles fine breadcrumbs.
