Thanks for this video. I had just watched your Pastirma / Basturma video last week and wondered what the flavor would taste like, but the process looked a bit involved for my kitchen. This method looks like just what I needed. I think I will try it in a pita.
Just made this recipe Henry, very delicious. Oddly enough this reminded me more of the taste of sujuk, rather than bastirma. Still an excellent recipe.
I'm not even Armenian but I miss my gata, nazook, and lavash from when I used to live in LA. Never had real Basturma but hopefully I'll remember next time I visit.
I live in an area that has a lot of residents of the middle east. I can actually buy chaman spice in the stores. Would that be a good substitute or should I just stick with your recipe? It looks great btw.

my old home town had a large population of Armenians, and various Mediterraneans. I really miss that cuisine.
I dont have a bbq or flammed oven, will this work in a normal oven? Any advice would be great. Thanks
Yes it can, although it would be better to do in a frying pan so it’s a quicker cook. An oven might make it dry
