Fantastic! Yes, you are "pretty good".😄 shirazi salad, unleavened bread and a cup of espresso to finish off and PRESTO, you've made yourself a happy customer! Merci my friend.

I like that you have 2 complimentary recipes that use both the juice and onion solids. Great stuff 👏

I’m so upset about that little chunk of mince that fell behind the bowl and was cruelly neglected.

Henry, my man, love all your recipes! I've been making your koobideh recipe for years now and it's always a hit! I love to just make about 4 skewers worth, throw down some gherkins and a nice chunk of bulgarian sheeps milk feta cheese (Rodopa brand, I believe) and go to town.
I've got a batch of your joojeh kebab in the fridge marinating right now. Gonna give that a try tomorrow, can't wait.

I’m Scottish but I did a year working/backpacking around Australia. Hope to take the wife there one day and if I do your place will be the first restaurant we visit mate

You can find this type of quality of Persian food in England.
You have to be careful it’s not Iraqi Kurds, though they pose as selling Persian food but it’s not the same.
You have to know some irani’s and they’ll point you to the real spots

Henry, I was wondering if you could share how to sharpen your knives properly. I know it might sound daft but I’m not entirely sure how to do it. I’ve splashed out on a serious piece of kit and I want to know how to sharpen them properly. Is that something you could share, please? Thank You. x
