パン屋で7年間くらい働いていました。
自分も夜中から働いていましたが、
これだけいろんな種類の生地を仕込んで、１階と2階を行ったり来たりして、スタッフの朝食まで作るシェフの姿を見て、気づいたら感動して涙が出ていました。
栄養まで考えてくれるシェフの気遣いにきっとスタッフの人たちは救われていると思います。これだけの仕事量をこなして更にスタッフへの誕生日ガレットは凄すぎます。
パンの表情を見れば分かりますが、シェフのパンに対する熱い思いがパンに反映されていてどのパンも美味しそうでした。
パンを作るのが好きで楽しくて更にそのパンを食べてもらってお客様に喜んでもらえる。パン屋って本当に良い仕事だなって思います。でも裏では毎日夜中から働き始めて、ずっと動きっぱなし。座る暇もなくひたすら生地と睨めっこ。何回も試行錯誤して美味しいパンを追究していく。
更にスタッフに教育までしていて素晴らしいなと思いました。
だからレコルトさんのスタッフさんたちはみんな楽しそうにいきいき仕事ができるんですね。
シェフもスタッフさんたちも同じ苦労を共に乗り越えてきているからお互いがお互いを支えあっていて、良いチームワークができてるんだろうなと思いました。
カメラマンさんも素晴らしいパン屋さんの裏側とパンを美味しそうに撮っていただきありがとうございます。
ここのお店にはいつか必ずパンを買いに行かせていただきたいと思います。

深夜から色々な作業をこなしていく姿がかっこよすぎる…！パン屋さんってすごく大変なんだろうなと思うし愛だとか情熱だとかそういうのが無いと出来ないお仕事だなあ…と改めて感じた。やりたいことも得意なことも好きなことも夢中になれることも野心も目標もなにひとつ持ってない自分からすると本当に尊敬します。
これとこれを合わせたら、って沢山アイデアが思い浮かぶほどパンへの愛情が伝わってくるし実際どれも綺麗で本当に美味しそう！いつか食べてみたいなあ。

I'm a pastry chef and is looking to become a baker next! He's very efficient with his work, and fit too. The flour bags are very heavy and it's impressive that he carries them with one hand, and runs up and down the stairs so much. Making _15_ types of bread / 15-20 types of dough on his own is amazing!! I wish I can become like him in the future. There are also many kids of unique bread that I have never seen before in my country! I wish to join a Japanese bakery in the future and learn how to bake these delicious bread.🥰

I sincerely have a lot of respect for all Bakers and Patissiers who put their heart and soul into their craft! Working in constant heat, exerting arm and leg work while performing mental math just to produce a beautiful batch of goodies like these is no laughing matter! I worked in this line of field during my senior year of high school, and it was a hell of a job. Salute. I'll probably be back again next year for an assessment. 😭✨

OMG! This is such an amazing BTS video of a day in the life of a Japanese baker. The passion, dedication and the speed of how he churned out loaf after loaf of breads, pastries, etc is just awesome! The fact that he cares about his employees well being by preparing breakfast for each of them and baking a huge pie for his employee's birthday reflects his character as a leader. Everything is so wonderful, the atmosphere in the whole shop, the staff, the breads, the people who come in and out, and mostly the boss!
I guess because the owner is a wonderful person, the employees and customers are also wonderful people🥐🥰 Of course the bread is delicious, but his humanity was very appealing✨✨

I am a baker in the US and I have actually have it really good compared to most other people here. I love my job, I love what I do. This guy is on a whole other level than that and it makes me cry. We'll never be as passionate as this guy.

数ヶ月前にこちらを拝見し、素敵なお店だなぁと思っていたら今回縁あって近くに宿泊したので立ち寄らせて頂きました！勇気が出なかったのとお忙しそうだったのでお声掛けは出来なかったのですがスタッフの方々は勿論店主さんも凄く丁寧な対応で、パンもどれも美味しかったです☺️この動画に出会って無かったらきっと立ち寄る事も無かったです！素敵なお店を紹介して下さってありがとうございました！
I want to work with someone like him. Someone who cares for his employees! People would enjoy their job more if the boss cared more and didn't micro manage or act like they are better than you, or act like a child.
