there are middle eastern coffee shops that actually make those. the best one I had was a small bakery in providence rhode island you can definitely tell they used butter the aroma and flavor. really delicious. then again every year in massachusetts there are always new bakery and coffee shops opening i over spend even though I can make some stuff at home.

Just wanted to say thank you for the excellent recipe, it tried this with your spanikopita filling for my youngest sons birthday tomorrow, just finished them (I didn't even leave it in the fridge overnight, I went straight to making them) and my whole family got a taste test and they are absolutely devine❤ will be making this again, it was so much easier than I expected😃😃😃

I noticed you have a kitchen aid stand mixer. I used mine with the pasta roller attachment to make the dough really thin then rolled them all together. Made it so much more easier and faster to do

Thank you for this, Shereen. I've tried making filo many times now and it always seemed so dense after making baklava. I can see now that I've been missing out on the baking powder and also probably used way too much corn starch. For some reason though, my sheets keep sticking and the dough feels a little too moist. I've added an egg into the dough as that was what a different recipe called for. Going with your one next time and shall let you know how it goes.
Hello Misnad! Yes, baking powder helps it to be more tender. To prevent sticking, I mention in my Spanakopita video to place plastic wrap between the filo sheets to ensure they don't stick. Not sure if you know Greek Katoumari a similar pastry, but using melted butter instead, then fried in the frypan until golden and covered with sugar and ground cloves. When fnished you break up pieces of fried pastry and serve. Also i have used a similar dough you made for spring onion ( green onions) pancakes also fried in frypan until golden, they are delicious, an Indian or Indonesian dish i think!
