- Here’s a confession of what I eat during the week when I want easy, delicious, filling and nourishing. It’s easy to whip together with the techniques shown. Packed with fiber and plenty of vitamins and minerals, oh yea, and protein.
This made enough for 4 LARGE meals and average cost was £5 / $6. Might be more if you buy precut veg or pre chopped greens and still well worth it.
I hope this is of benefit and inspires you to take and make your own way.
*Frankie enjoys vegan dog food as her main meals - find and research producers in your country to give it a try - she loves it.

CHEAP & EASY WEEKDAY MEAL
1 block extra firm tofu, sliced thin
1 can chickpeas liquid and all
1 big bunch Greens (cabbage, kale, chard) chopped
4 large carrots, chopped
5 potatoes, cubed
1 Onion, julienned
2 cloves garlic, minced
2 chillies, chopped (optional)
Olive oil (optional)
Salt and pepper to taste
Nutritional yeast, garnish

Do you prefer a particular vegan kibble for Frankie? I have 2 hounds that eat my pay check and would love to do what you’re doing. Our greyhound has a sensitive stomach & our foxhound can’t do winged things so we’ve been stuck with beef for both & I’d like to quit contributing to that suffering since I do so for my human family food choices.
Honestly Derek, finding your channel has changed my life. I haven't eaten animal products in over two months, and have been following your recipe videos and using your cookbook. I find I'm not missing anything that I used to eat, and I feel so much better. Thank you for being a light in this world. You are appreciated ❤

Love how you show that good tasty food doesn't need to be cheffy or difficult or contain anything to do with an animal. One thing I'd like to ask is I always drain my chickpeas because the aqua fabia is all thick and gloopy but I've noticed yours looks more watery, am I just buying poor quality chickpeas?

Your baked tofu blocks have saved me! Do mine in the air fryer… two at a time, different seasonings. Always have some protein in the fridge when hungry!

@@MsCValentiner Drain tofu, spread some mayo over the brick. Dredge brick in seasoned nutritional yeast mixture. Air fry for 25 mins @ 350. Perfection.👌
I swapped the mayo version for the vegan yoghurt version. Same seasoning (any seasoning you like, honestly) and then in the oven at 200°C for about 25 minutes or until a crust is starting to form. I then flipped it over and baked another 15 min or so.
I make meals like this pretty regularly. "Tis a gift to be simple!"

I love that you’re showing this because this is what I do on a regular basis and what I love about recipes like this is you can easily change the spices to have variety. A little bit of curry powder and tahini poured on top or ginger and soy.

This is a great "base" recipe. One can add all sorts of flavorings/spices to each bowl to mix it up and change the mood: teriyaki sauce, BBQ sauce, poultry spice, pumpkin spice, curry, Italian sausage spice mix, Japanese BBQ sauce, etc. This is the best way to cook and eat. Absolutely.

Great idea! I've been leaning toward the "stone soup" method to just use whatever is on hand with layers of seasoning. You mentioned rice, also perfect match for any other grains, i keep several prepped in fridge for the week. Thanks for showing how easy it can be!

I love this video. Sometimes I feel bad seeing the cooking channels make so much complicated and fancy recipes as weeknight meals and it doesn't work for me when I try, but it feels reassuring to see a professional chef make something more like what I actually eat.

I’ve been loving the collards lately with chopped onion. A bit of Bragg’s Aminos and some sesame seeds with herbs mixed in et voila. Super flavorful and healthy. I cook them in an old Cephalon wok. I use water to saute instead of oil.
