Butter Cake

  • This is another old recipe of mine. The last time I made this was like 30 years ago because I misplaced the recipe and just recently found it when I was cleaning my office. This recipe might be more tedious to make because it requires the egg yolk and the egg white to be beaten separately. This step is important so your butter cake is not dense and dry so please do not skip.
    Most butter cakes are heavy and dense like a pound cake but this one is lighter and more delicate. The secret to any butter cake is always a good quality butter. I suggest one with 82% butterfat if you can find one. I will not give you a specific brand because it is also a matter of personal taste and preference. Not all butters are created equal.
    Chef's Notes:
    The butter cake baked in a wider pan like a rectangular pan will have a flatter more even surface that will not crack because the heat is evenly distributed.
    In the video, I used a loaf pan which is the traditional pan used for butter cakes and it is usual for the top to crack because there is little surface area for the heat to be evenly distributed.
    The appearance will not alter the taste or the texture of the cake. It is also a matter of preference on what pan you want to use.

      You can use butter cake on a lot of desserts as a base. Tiramisu, English Trifle, or sandwich the cake with creme chantily and fruits of your choice, prefer tangy ones like strawberries and kiwis.

      I like to use a simple whipped cream frosting with fresh fruits on top. "Best" frosting is relative so I can't say it is the best one. But for me, I would use whipped cream. Thanks for watching!

    Thanks Chef ❤ nice recipe here. Very much Useful coming holiday season. I might have to find alternative though for a healthier sweetener like pure maple syrup or honey. Diabetic si mama. Ako borderline. Haaaay. But Butter Cake is my favorite. Max here. Love all your videos. From native delicacies, to cakes and pastries. 👍❤

    Looks like only bottom of the straight sided pans were lined. The sides you can loosen and release with a blunt knife or metal spatula ???

      Yes that is right. I lined only the bottom but you can also line the sides if it is easier for you to remove the cakes from the pans.

    Hi Chef Rose, what is the shelf life of this butter cake and did you line and grease your pans?

      I only lined the baking pans. I did not grease them. Shelf life is 4 - 5 days at room temperature. Longer if refrigerated.

    Hi chef ... is it possible to provide the measurements in grams ? It will be more accurate if i want to divide it into half or 1/4 th . This is a huge batch . But i really wanna make this ❤

      We have not resumed classes yet so I can't give you an estimate of the fee but it will definitely be reasonable and value for money. Hopefully by January next year we can start our face to face classes.

    Question po: do we line the sides of the pan or just the bottom?
    If I use a bundt pan, do I need to grease & flour the pan?

      I lined only the bottom but you can also line the sides so it will be easier for you to remove the cake from the pan. You need to greased and flour if you use a bundt pan. Any frosting will go well with this cake. Thank you!

      Did you use a loaf pan? If you use a square or rectangular or round pan, it will not form a mound of top. It is an issue with heat versus surface area but as long as the cake did not sink in the middle, then it is absolutely fine.
