    Ingredients:
    Caramel sauce
    Granulated sugar 100g
    Water 20g
    Whipping cream 100g
    Sea salt 1g
    Unsalted butter 30g
    Cookie base
    Cookies 80g
    Melted unsalted butter 25g
    Cheese mousse
    Cream cheese 200g
    Caramel sauce 35g
    Granulated sugar 20g
    Lemon juice 6g
    Gelatin 2g (soak in ice water in advance)
    Whipping cream 150g
    Mold size:Φ12cm
    How to make:
    1. Make the caramel sauce: Place the sugar and water in a saucepan and heat over a low heat until it changes colour, while heating the cream in the microwave. When the sugar water in the saucepan turns caramel, turn off the heat and slowly add the heated whipping cream, stirring well. Add the sea salt and unsalted butter, stir again and leave to cool.
    2. Make the base: Prepare a five-inch round bottomless tin and cover the base with cling film. Crumble the crackers and mix with the melted unsalted butter, pour into the tin and compact.
    3. Make the cheese mousse: put the cream cheese in a bowl and whisk until smooth, add the caramel sauce and sugar and continue to whisk well, then add the lemon juice and whisk well.
    4. Soak the giardinieres beforehand, squeeze out the excess water and heat them in the microwave until they melt (take care not to exceed 70℃/158°F), then add them to the cheese mixture and mix quickly.
    5. Whip the light cream until liquid and thick, mix with the cheese mixture, pour into the mould, smooth the surface and chill in the refrigerator for at least four hours.
    6. Remove the cake from the refrigerator, top with the caramel sauce and chill for another half hour before serving!
    Tips:
    Caramel sauce can be made by yourself or bought ready-made.
    You can choose your favourite flavour and brand of biscuit.
    Cream cheese should be softened at room temperature before use.
    Gelatine sheets can be replaced with gelatine powder, use the same amount.
    The cake can be covered with cling film before chilling to prevent the top from drying out.
    The cake can be sprinkled with some nuts or chopped chocolate for decoration according to personal preference.
