That way, you have a good head start in making sure the spices, etc. are evenly distributed throughout the filling. Carla's methods all show great common sense ❣️

She may not want the commitment of carrying a weekly show. The way she is now, she can fill guest and judge slots and still get a damn good paycheck without the headaches.
I ALMOST didn't watch this video cause of the time. I thought too long..but it was Carla so I watched! Omgoodness such care in explaining, what a TEACHER. Carla explained why she was doing it and answered every possible questions. BRAVO 👏 👏 👏
I love sweet potato pies also, I noticed that quite a few folks make their filling really thin like the texture of a custard.mine is the same texture as yours, I also add vanilla & lemon flavor, to the same spices you Use , & I always use my stand mixer because it remove the strings from the sweet potatoes, Back in the day my mother never had that problem, Now days the sweet potatoes have so many strings in them you can't even enjoy the pie. So the use of a mixer/ or a blender is a must.

Lol the same thing just happened on Facebook, I mentioned that my mother use to make her spaghetti sauce from scratch, using tomato paste , water accent, celery onions etcetera, then this lady says im sure you didn't mean to say tomato paste because it is just what the name says a paste. Lol, folks need to stop acting like they are mind readers, & teachers, actually I meant exactly what I said, back in the 50's everyone used tomato paste.
I do mine the exact same way. I add vanilla and lemon extract... but, I boil my potatoes and then mash them, put them in the mixer because those strings are awful.

Sweet potato pie is a denser pie than pumpkin which in most recipes tends to be a custard pie with pumpkin puree added. A mixer or food processor would add too much air and lead to the wrong texture and cracking on the top.

Best cooking class ever!!! 👏🏾👏🏾👏🏾 Iim feeling empowered to make my own crust now, bcuz no one has ever gave a lesson so easy. I usually get store bought crust bcuz I’m intimidated. I’m gonna try it! My recipe (my mom’s recipe) is very similar to this except we use vanilla extract and a little bit of fresh lemon juice. Can’t wait to make this version! Thank you ☺️👍🏽☺️

This recipe is outstanding! I tried it twice.....first time was good but it was purely for my learning experience. My second try was awesome. my family loved it!
I have watched a cook on YT who uses a beater to get the strings our of his sweet potatoes before he starts to mix his sweet potatoes to make his pie. I realize that everyone has their own way of making their pies. For myself, the strings don’t bother me. I just mash my sweet potatoes and then mix in the other ingredients. I like to put my room temperature butter in while my sweet potatoes are still warm. That way, the butter goes through the sweet potatoes quicker as it melts in the sweet potatoes. I don’t generally measure my sweet potatoes. If I cook 3 sweet potatoes, I generally use all of the sweet potatoes in my pie. I CAN make pie crusts but I tend to take the easy way out and use PB frozen pie crust. However, after seeing how you make it so easy, I just may make it homemade next time. Thanks for the tips on how to make the pie crust!

Did I learn more about pie crust today? YES!! cubing the butter then dousing in flour for coverage... I never knew! Blind baking is a term!! weighing pie down (using what you have)! putting the crust back in oven when areas are underdone (another term)! I am eager now to make some pie crusts. (I use condensed milk in my sweet potato pie). Thank you, Carla.

I think that you meant to say that you use a hand-held mixer!

@@pinkpeony2171 You can use a handheld mixer or a blender. A stand mixer is great too.

You can use the extra bit of crust and use a turkey cookie cutter to embellish your pie. This recipe makes me want to try sweet potato pie 😋
