A good cooks measurement is what looks like it is setting up the way irlt should.
I can't recall a time my family uses measuring cups or measuring spoons. I guess because as my cousins use to say....Your Mother was a Saint and God sent her here to Feed Us All. Best cook ever.
A recipe is what tastes good to the cook. And usually most everyone enjoys it.
Most of these ingredients my Mother taught us to cook with. Some she said would nit have been to the taste of some so leave those out.
Cooking us not hard. People makes cooking hard by over thinking everything.

Actually; all it takes is common sense to season food you've been cooking for years. I guess you would need to measure if you don't know what you're doing in the first place. I measure by common sense, something a lot of people simply don't have. I loved the way she prepared her homemade dressing.

Thanksgiving dinner is tomorrow at 1:30. I am about to make my cornbread now. Mom always made baked cornbread dressing. About 20 years ago, I started making stovetop-style dressing, but from scratch, not using the boxed kind. Everyone really enjoys that one. This year I need to travel a ways and won't have stove access when I arrive. I I am making baked dressing this year.

The only thing mother added was the meat from the chicken neck, gizzards, liver and heart. She would boil it altogether , chop it up and add it to the dressing and the stock of the turkey. We also added hard-boiled eggs in our dressing. I love all the seasonings you added. Just like her. Boy does it look good I wish I could have a bite of it right now. God bless you! I have never seen anyone make cornbread dressing by starting off cooking the cornbread 1st.but to each it's own. I start off with the vegetables and after chopping up my veggies I start on my meats that I use. The cornbread is the last thing I work on cooking because you need to add your meat and veggies to the dressing and mix it all up together with your stock and your meat (gizzards and liver's if you prefer.I never add soups to my dressing. I feel what this lady is making stuffing instead of cornbread dressing.

@@donnaking8056 you are wrong. As someone from Idaho living in rural Louisiana, she is most definitely making dressing. And I have NEVER ate nor seen anyone in the south make dressing without cooking the cornbread first. Stuffing is white/wheat bread chunks dried and moistened with stock and sautéed vegetables then baked. The texture is nothing like dressing which is more of a casserole like texture. If you’ve ever had both, you would know there is no way to mistake the two. I love them both but they are completely different.

Excellent...my mom made the best dressing or the best anything as a matter of fact. She was just a great cook...all the women and men on my family can really cook.
One thing my mom did was she would add her vegetables in the cornbread mixture. So they were already cooked. Just a little tip to save a bit of time. She would cook it half way take it out give it a stir and all more stock, cream of mushrooms, celery, chicken soup to keep it moist as it finished cooking. Turn off the oven and let it rest. The heat will finish making it solid...not dry! This is a great recipe you have. Surely reminds me of my Mom 🥰

I use a double batch of my gluten free cornbread. Then I combine diced onion and lots of celery with two pounds of bulk Jimmy Dean sausage sautéed in a stick of butter until cooked through. Then add Bell’s seasoning which is a poultry seasoning made in Massachusetts. Combined with liquid from cooking turnip and carrots and it is a wonderful flavor and consistency of your choice. I like moist stuffing. It is very similar to your delightful recipe and I hope others try it sometime. My husband is from NC mountains and corn bread with milk or any other food or alone is his favorite food. The rest of my recipe is from my mother’s father who used the sausage. Memories. Good southern style cornbread dressing with chicken makes me miss my mother. Growing up this was our favorite meal with green beans on the side or mash potatoes. Thank you for sharing.

Your dressing is very similar to mine. Instead of putting egg in cornbread, I like to chop about 4 boiled eggs and stir in. I do use 1 egg in my cornbread.
