Today I’m going to cover the healthiest oils to use when deep frying. The oils you would want to avoid using when deep frying are unsaturated oils. Unsaturated oils are very unstable, and they oxidize easily, especially when heated.
A few examples of unsaturated oils:
• Soy oil
• Corn oil
• Sunflower seed oil
• Safflower seed oil
• Peanut oil
• Canola oil
• Cottonseed oil
There is a certain chemical compound that’s created when you heat unsaturated oils. This compound could have negative effects on your heart and may even potentially increase your risk for cancer. Some of the potential effects of this compound are more dangerous than the potential effects of consuming sugar. It may also slow down autophagy.
The best oils to use when deep frying:
1. Coconut oil or palm oil
2. Tallow (fat from grass-fed beef)
3. Ghee
4. Olive oil (keep below 400 degrees)
5. Avocado oil
The above oils are more stable and won’t create the dangerous compound that unsaturated oils do. They won’t oxidize as fast, and they may be much safer when heated.

When I was a kid something everyone knew was: oil is for lubricating machines, fat is for cooking.
That is why they and I cook with butter and home made pig fat lard, school is still out on olive oil, but you did clarify it a bit for me, I think I'll start making ghee.
I'd say few oils are indeed good to addyo diet and olive is one of them. Mediterranean diet has olice oil, so does italian. I love eating olives, and they are good.

Ghee:
Back in the village that I was living everyone was using Ghee and there was no such a thing as Diabetes, high blood pressure, heart diseases or anything like that but now everyone is using corn or sunflower oil. And everybody will get sick all the time.

To just say fat can include a higher percent of unsaturated fats. However TALLOW specifically means a high concentration of SATURATED fat.
Turn the food pyramid upside down, and that is the healthiest diet.

This topic really interests me, as much as I'm really confused about it. So, peanut oil is bad, but the peanut itself is not bad, right? By the way, I do love the healthy nuts you have mentioned and I have them all, I've just finished eating some walnuts and cashews and pumpkin nuts, later I'll have pistachios. @@angelshelden2281 no, corn isn’t bad, corn oil is , for example. The bad part is they extract the oil using highly industrial processing methods which result in the oils being unsaturated and unstable , also unatural since they are meant to be consumed with the whole food they come from and the proportions they’re naturally in.
Even if you’re young and healthy please take this great advice now. Being in our 60’s now and facing health issues that could have been prevented if we had started them sooner is something to consider. Ty Dr. Berg. You help us seniors to understand how to change things as well.

This channel helps me a lot for my health. Specially on doing keto with IF. It saves my life from sugar and carbs addiction/cravings. I just fast 3 days to eliminate or clean my body from toxic since birth. I am super thin with 5ft. 4in. height to 45kg of weight. My weight drops to 40 after 3 days. Haha. Then start to keto diet after that. For now I don't need IF, maybe on the future days. I just do keto to stay healthy. My achings are gone. Thanks so much for this hero doctor.

Does it matter if the coconut oil is refined?
Palm oil is garbage oil never never never eat palm oil!
Your best bet is to stay with olive oil, extra-virgin first pressing organic from one country in a small bottle, and I would keep it in the refrigerator because even olive oil goes bad.

Traditional only Ghee was used for cooking and deep frying. Later in South India we started using organic filtered sesame oil for deep frying. For cooking Coconut oil, groundnut oil and in North mustard oil - all double filtered oils.
Sunflower oil was later introduced. Now people use all kinds of oils.

I had a premature heartbeast. Went OMAD (one meal a day) cut all veggie oils. Eatting lots of animal fats, coconut and dairy fats. The pre beat went away. I had it 15 years following a moldy house problem. Dr's all said I was fine. It hurt when it happened. Not all the time, a few times a day to once a month. Now its gone. Amazing

I use home-made ghee mostly, but 'refined' Avocado oil as well (the virgin type has lower smoke point, same as coconut )
Right but dont use refined oils. Use raw unfiltered. Deep fry at 325-350 max

palm oil for cooking and yet most turn to corn, canola or soy oil thinking it is healthier.

In the gluten free diet, palm oils are recommended too. They are differently changed in the body and don’t contribute to bad cholesterol load. They are firm when air temps inside the house are hot. They were recommended for use in making pie crust with gluten free flours. It seems to melt only if used over direct heat such as in a skillet or in baked goods. Coconut oils will melt inside the house when summer temps are also high but it tastes the same and will regain its firmness when temps go down or are used in baked products. It also doesn’t stick on the internal walls of blood vessels as it is digested. Our brains are made up of the low density oils but since the discovery of different types of low density oils such as found in Palm and coconut oils, there is a change of info on healthy and unhealthy oils. But people who don’t read the actual details of oils will still fall for any new veggie oil that comes along and the industry will declare it good because it’s not a solid fat...consider canola oil. It was invented in Canada as an industrial use oil...like a wd40...but it was so easy to make and there were such massive a,lungs,,that it had to be sold for other purposes so as not to lose money. I don’t know how much the refined it except to thin it down and began selling it as a food oil. Now many pre packed stuff or cake mixes will be made with canola oil and imo it’ll kill ya. So will soy oil. And it’s often listed as a dry oil product, lecithin, in mixes for human consumption too. I can ...get by...with using anything with the freeze dried soy oil in a gluten free diet on a limited basis. As for olive oil,,I’d read the same info, it wasn’t good for frying because high heating causes the molecules to change into the bad kind of Low density oil that gums up the blood vessels. I noted another poster said the evo extra virgin olive oil will stand up to frying at higher temps, I’ve read that too, so years back,,switched to EVO. Frying at high temps will change the molecules in a lot of foods making that not good for consumption....but we eat it anyway.

I am an Indian and I grew up using plus eating lot of herbs, spices including turmeric on a daily basis. Almost all foods we cook have turmeric. I also learned making ghee and I do it on a regular basis since I consume milk. Interestingly, I also use different types of oils like coconut oil, mustard oil, olive oil (mostly extra virgin) for the cuines.
I do tend to lower consuming ghee though.. but it's delicious!
this turmeric maybe good for u but it stains everything yellow and is difficult stain to get out.
I think It depends on the amount of turmeric you use. I tend to use 1/4th tsp in my curry preparation and it doesn't turn too yellow and I get benefits of the turmeric.
But yes I also agree it's hard to remove the mess turmeric creates 😂

In Ayurveda ghee is medicine. Never worry about ghee as long as you’re having it in moderation. I have it everyday.
Most Indians use seed oils to deep fry, and thus have high obesity and diabetes.

I am a north Indian and my people ( ancient) like my grandfather, consider ghee as divine, magical specially the one made from grass fed cow, even buffalo's ghee is very good.
My grandfather and his father lived more than 100yrs and they consume ghee in milk ( yes even in milk, but it was only when they do wrestling exercise) in vegetables, on Indian bread( chapatti/roti), with sugar and even drink the melted ghee, they never eat any other animal product like eggs or meat, and were know for their strength among their friends, many time when my grandfather fall sick( during his 90's) doctor visits our house and I remember doctor saying that during his whole career he found only my grandfather as a person who has blood pressure exactly 120/80, he never seen any person with such accurate BP always.
What I noticed is that ghee does not provide any protein supplement, it just keeps the hormonal balance of our body, keep body thin, rest the strength associated with ghee is the hard work which people used to do, now people don't do that much of exercise and want easy muscular growth which ghee can not provide, ghee is something which makes you look like ants, strength of ants and never resting person always working. Light weight person, although ghee in itself is pure fat.
There is no scientific proof of these, they are just an observation of a person.
Where could one acquire a nice amount of ghee without it being too expensive? We do a lot of frying potatoes and onions.

Here in the UK we tend to know the beef fat as 'dripping'.
I don't even know whether they are still open even, but a local fine and chip shop (another British peculiarity) where I used to live over a decade ago used beef dripping in their fryers.
Now we find that not only did it taste better than the cheap vegetable oils used elsewhere, it was a healthier alternative!

anything is better than processed hydrogenated oils. fruit oils like avocado, olive, coconut and palm oil are always the better choice than those "veggie" oils like soy, corn, sunflower or rapeseed oil that are always hydrogenated.

Once again, super important information, based on science, with no BS! I already mainly use these suggested oils for day to day cooking, and they are great! One oil not mentioned is rice bran oil, how does that stack up to the good oils mentioned? Lastly, my only concern is cost because if I’m gonna “fry” anything, I’m absolutely pulling out the deep fryer, and that sucker needs a big ‘ole jug of oil to fill! I do filter and properly store the used oil, so it gets used several times, but since I try to use the deep fryer for special occasions, sometimes it goes bad because used oil doesn’t exactly have that great of a shelf life… So Soy/vegetable and peanut oil are just cheaper to use, and they can easily be found in bulk. But I also wonder if they aren’t as bad/release less ALOEP when the temperature is being very accurately controlled at precisely 350F? Anyone know, as I’m extremely curious!

I just started using HIGH OLEIC safflower oil. It is high in monosaturated fats ( among the highest of oils ) and has a high smoke point ( 450 degrees ). The brand I bought ( Oleico ) even has 8 mg of vitamin E ( as mixed tocopherols ) per tablespoon as an additional ingredient . It is non-GMO, first expeller pressed, according to the label. While I use good quality lard and good quality extra virgin olive oil, when I want a neutral tasting oil the high oleic safflower is what I am now using. It is much cheaper than avocado oil especially when I buy it by the gallon. I wouldn't buy regular safflower oil due to the high level of polyunsaturated fats.
I remember approximately 20 years ago or so, a couple of universities did a study on what were the best oil's to use , what absorbed the least in the food and what was the healthiest.
Number one and number two were pork lard and beef lard. The rest of the oil's throw in the garbage my grandmother used beef and pork her whole life. she lived a great life.

About Ghee (clarified butter), I just bought the raw thing, haven't claried it to remove milk solids/proteins. I'm scared of doing that because I don't wanna overheat it and risk losing vitamins A, D, E, K2, etc. Is it unhealthy to consume it as is? I hope you get to see this. PLEASE respond.

I do believe more work is required in regards to animal fat and proteins. Consuming animal products may have several short term health benefits, but long term are most definitely life threatening. I've discovered some things we used to deep fry are also delicious baked.
I used to fry and then finish off in the oven to render off the extra oil. One day I skipped the first step tho and never looked back. A deep frying step is definitely necessary for some foods but not most.

I still do some deep frying , using only peanut oil or grapeseed oil, both design for high temp .
Its much healthier than pan fried , like you said , also depend on the dish.

Wow I think ive found why I'm having so much inflammation this week. I started eating lots of chickpea chips fried in oleic sunflower and my joints have gone crazy along with neuropathy in feet and hands.
Awesome. I've been frying eggs in olive oil and worried about it but I keep it just hot enough to fry the eggs, below 300F.

@@souadasou diced into similar sized pieces, in the oven in a large pot for about 4 hours on 100°c. You can stir every once in a while. It melts into a liquid, you then pour through a strainer into your desired storage. I put it straight into my fryer and seal it with clinch rap. It stays on my kitchen bench for months and doesn't last long enough to go off. After each use I do strain it as well so its not contaminated with food chunks. When it cools its sets like butter and should be white. I buy my meat in bulk and cut off the fat myself and freeze it until I have enough.

@@xxkissmeketutxx from personal experience, at room temperature tallow get fusty soon with mold. It is better to be kept in glass container in the fridge.
@@kalkali1725 agreed my pregnant wife always has the air con on in the house so it's pretty cool most of the time that's probably why it works for me. Our ambient room temp is a constant 20°c

Dr. Berg, all the healthy oils you recommend are not neutral tasting which many recipes call for. What oil would you recommend that is both healthy for frying and also has a neutral flavour that won't overpower other flavours in the dish? Thanks for the awesome videos! :)
I use rice bran oil after seeing it on Dr Oz show. It has no flavour. It's just perfect
The evolution of my cooking oils.
Growing up we used first used lard for cooking.
By the 1970's the family switched to corn oil.
By the 1990's I used canola oil exclusively for everything.
In 2009 I had a mild heart attack.
I moved to Thailand a year ago and all we use is coconut oil. It seems to be the only type available in the stores.
I haven't noticed any difference in my health but I'm happy to see it's a healthier oil for frying.
I live in western Bangkok suburbs, and consider yourself lucky by just finding coconut oil. We've been using soy, sunflower, canola and coconut oil. Three out of four on the bad list. Went to the hospital the other day, to have a visit with the doctor, and after many hours testing, I got some problems. So for the past few weeks my wife has been using water to cook meals for me. The only oils I use now are Avocado or EVOO. Good luck to you.

I'm surprised, that you did not mention the difference between red and white palm oil. While the white from the core ain't that good, the red one pressed from the fruit itself is by far one of the best and healthiest oils available. Reach on vitamins A and E. However, it has it has a specific taste not everyone likes (if cold pressed and not processed)
I rarely eat fried food but when i do I fry with my saved up bacon grease. I also use Bison Tallow when I sauté my food.
I can testify to this. I have used Tallow to deep fry fish (Tilapia and Sardines) and results are amazing. Great taste (in fact very delicious) and better after-meal effect( gut happiness) which translates to better mood. We get our Sardines from Lake Victoria, Kenya.

Coconut oil or beef tallow for me. The biggest problem is finding actual Olive or Avocado Oil with the revelations that many in the supermarket are actually some other cheaper oil (probably vegetable oil). I really wish there was an easy way for consumers to test the oil they purchase to verify it is really what the label says. 😣

He forgot lard. When I was a child (60's) Lard was the shortening my mother and Grandmother always used and today some are going back to it. Yes, it's hard to get the natural form, unless you help in the butchering of a neighbor's pig, but try the Mexican groceries stores. They have more of that type of natural thing, and last year Mexico declared themselves Glyphosate free. My gallbladder loves Mexican origin foods.

Could you please, please also explain for deep frying and in general the health or risks of Mustard Oil (Cold Pressed Organic). Or is that inconclusive as of now.
Also please when u mention temperature it would be helpful to let us know if you are referring to Celcius or Fahrenheit.

Using common sense . Mustard oil is used since Millenia in India and one of the most healthiest oil to be used for all kind of cooking .
@@a9a9d thanks. The problem is not common sense. There are enough market evidences that say the opposite. And Mustard oil wasn't used for cooking for millennia in whole of India. It was only common for certain northern and eastern area of India, not whole of India.

Rapeseed is best. As healthy as olive oil. Only drawback is outside driving past a full rapeseed farmed field - ACHOOOO🤧!

Finally bought an air fryer, every new home/remodel should come with at least one air fryer as part of standard appliances like stove, microwave, fridge, etc. Best purchase I have made in many years. The only thing I can't cook in it so far are fried (green) plantains, those you have to deep fry them otherwise out of the air fryer they come out like hockey pucks. But we eat those like once a month, virtually everything else is air fried, makes the best bacon too, all the extra fat drips to the bottom.

The safe oils you mentioned,all have a pretty low smoking point plus some unwanted flavor. What oil would you use to fry unbreaded chicken wings?
All the safe oils mentioned have the HIGHEST smoking points among all oils. Especially olive, coconut and avocado oils. And avocado oil has no flavour when refined.
Olive oil has low smoke point at around 400 F degrees. Not sure why it is recommended for frying. I know it's good for taste enhancing but not sure about frying.
Finally, there's someone who not playing politics with palm oils.
