Am in the process of switching to Olive oil and now see that the Avocado oil, Ghee and Coconut oil would also be a welcome addition for different baking or cooking tasks. I think the Avocado oil would be great if one wanted to make their own mayonnaise since it has little or no flavoring. Aside from butter, is there a healthy alternative to shortening - I try to be dairy free when possible (don't digest lactose well) Or would there be a lactose free grass fed butter on the market??

Thank you very much for all this information, to say the least, saving. QUESTION : what do you think about using an oil (a good oil of any kind) repeatedly. Otherwise, you cook chicken with oil and save the rest of that oil for cooking again ? If it is possible, how many days should it be kept so that is always good and where : in the fridge, in the open air ?

Ghee all the way for me, preferably grass fed cows. It's definitely not fake compared to most EVOO's and you get a great balance of saturated and monounsaturated fats. Fried eggs taste so good cooked in it. I prefer the taste over olive oil too. The great thing about Ghee is you can make your own as well, fresh with packs of butter. You can't do that with EVOO unless you are directly at the source of the olive groves.

Hey Bobby my husband and I tried the avocado oil and the avocado spray and I have to tell you I had an anaphylactic reaction to the avocado spray! The first time I used it was the scallops so I thought I was having a reaction to the scallops. But I used that oil again a few days later, to prepare some burritos and I got anaphylactic again. Had to call an ambulance spend the night in the hospital get treated with Epinephrine. I’m not sure what’s in the can but my body didn’t like it and I just wanted to share. I have never had a food reaction like that ever.

Coconut oil is quite nice for baking as a 1-1 substitute for butter/oil. If you enjoy the flavor of coconut, I’d encourage you to try it in baking. It’s especially delicious when used in brownies and other chocolate recipes. If you don’t like the flavor of coconut, you can try virgin refined coconut oil (in solid form, which is less processed and inflammatory). Although it has less nutrients than that of unrefined, it has a much much lighter, less potent flavor profile. Happy cooking and baking!
