  • What is Trini chicken pelau?
Chicken pelau is a savory one-pot Trinidadian favorite. Meat including chicken, beef or pigtails is first browned using “burnt sugar”(little past caramelization point), to which rice, fresh herbs, peas or beans, veggies and coconut milk are added resulting in the most comforting of dishes. A superb marriage of protein, carb and veggies made in heaven that makes me wanna say I do, I do (to another plate or two)!!!

Thanks for this upload... As a "Trini to d bone" I could have Pelau for breakfast, lunch and dinner, so I thought I'd just give a little tip which I hope you can try. If you can find our local green-fig fresh leaves or banana leaves (as they're probably known) try covering the top after adding the coconut milk with a cleanly washed one so that it's steamed for the last 15 to 20 minutes of cooking. It imparts an out-of-this-world taste but use only the fresh leaves...

Thanks for including the shortcuts. Gonna use the grated coconut for coconut milk in my hominy porridge 🇯🇲 next time. A hassle to break the coconut 🥥 all the time.

Thank you for the tip on if you want the pelau to come out grainy or soft. I now understand why mines always come out more on the softer side, lol!! I prefer to blend my coconut and add all those seasonings you added to yours, tastes way better. For some reason I always make fair rather than dark pelau, lol. Beautiful and well explained video as always. Thank you!!!
