Chinese Fried Chicken, Chow Mein & Fried Rice

- LEARN TO MAKE THIS WONDERFUL AND TASTY COMBINATION OF TRINI CHINESE STYLE FRIED CHICKEN, LO MEIN (TRINI CHOW MEIN) AND FRIED RICE.

Chinese style fried chicken
4 pounds chicken, whole or pieces (or legs and thighs)
2 scallions
8 cloves garlic
3 tablespoons minced ginger
1 cup regular soy sauce
1 tsp five spice powder
Hot pepper, sliced
3 cups vegetable oil, for frying
Cut chicken in half if using a whole chicken. Wash with juice of a lemon and water or vinegar. Rinse and pat dry.
Place remaining ingredients, except oil, in a food processor, blender or and pulse until roughly chopped.
Season chicken with blended mixture and marinate several days or minimum overnight.
Next day remove from marinade, place on a rack over a sheet pan and air dry in the refrigerator for a couple of hours or overnight.
When ready to cook, bring chicken to room temperature.
Heat oil in a large deep, heavy bottomed pot over medium heat.
Carefully place the chicken in the hot oil, reduce heat to low and fry both sides until golden brown and fully cooked.
Remove chicken pieces from the pot, place on paper towels or rack to drain.
Cut up and serve.

Like the recipe. But why you don't you use eggs in your fried rice?
Thanks. Not traditional. Back in the days when money and food was scarce, eggs would have a whole other complete meal.
@@CookingWithRia Don't know what you mean by back in the day eggs were scarce? Back in the day you could find a chicken in almost every yard. Unless you lived in the bush somewhere, and was so poor that you used a flambeau in your house for lighting, I could understand not being able to afford eggs. Back in my days in Trini, we never paid for an egg. Now because of the pandemic, I could understand the availability of some items not being available. Eggs do add something to fried rice. But I have no doubt your rice was delicious.

I've never seen places owned by Trinidadian people sell Chinese food. Is this something new?. The Trinidadians I met never cooked Chinese style food at home, seems more a Guyanese thing.
Good job! I first thought this was was going to someone using pre made spice mix from the store, which I dont consider cooking. I see so many people using premade west indian spice mix from Trinidad, and other places, and they call it cooking.
