EASY Trinidad Chicken Pelau

- Pelau is a savory one-pot Trinidadian favorite. Meat including chicken, beef or pigtails is first browned using “burnt sugar”(little past caramelization point), to which rice, fresh herbs, peas or beans, veggies and coconut milk are added resulting in the most comforting of dishes. A superb marriage of protein, carb and veggies made in heaven.

Serves 6-8
Ingredients
4 lbs chicken pieces (whole chicken cut up, thighs or drumsticks), washed and drained
6 tbs green seasoning
1 onion, chopped
2 tbs minced garlic
4 tbsp tomato ketchup
Hot pepper, to taste
Salt and pepper (to season chicken)
2 tablespoons oil
1/2 cup brown sugar
4 scallions, chopped
1 stalk celery, diced
3 cups parboiled rice, washed and drained
2 cups cooked pigeon peas (1 can, rinsed and drained)
1 medium carrot, diced or 1/2 package peas and carrots
1 red bell pepper
10 thyme sprigs, chopped
1 can coconut milk diluted with 3 cups hot water
Salt and pepper to taste

Update...Sooooooo, good..my mom never taught me much and 1st try-Perfect...I followed the recipe to the T, only thing i didn't have was the red bell peppers, used 3 lbs of chicken which I thought was alot at first and old Thyme-didnt have any fresh but I used what I had and it worked..ONG, I want to cry...TY so much, I've been really cooking fir a few years and I'm turning into a great cook

I noticed that when I use the Himalayan pink salt i use more than I would with regular white salt. My mom has high blood pressure so I have to be very careful when cooking with salt & whenever I do use the pink salt I'm always worried because I know I would never put as much with regular. I guess I have to research it.

Ria. I thoroughly enjoyed your informative video on how to make the green seasoning. If decide to add oil to it could I use olive or grape seed oil?
I feel it will store longer in the fridge with the oil mixed in.
Also what kind and where do you buy the already peeled garlic cloves. Would you use the ready minced garlic that is available. I have to say I am not comfortable using garlic coming from Asia. They have had some bad publicity in the past. Your advice would be most appreciated.
RIA,HI ANOTHER WONDERFUL MEAL,MY BROTHER WHOM LIVES IN T&T, visited us many years then FOUND GUNGO PEAS ( pidgeon, or granules ), with coconut oil in it,well he took back 12 cans.
Most of your meals & JAMAICAN, I use an ORGANIC COCONUT OIL from COSTCO, I also eat 1 tablespoon every other day,..Stay well 🇹🇹🇹🇹🇺🇸🇺🇸
