When I was a little girl, my mom used to put in my lunch box "ponquecitos ramo" to eat during the break, I must say that these ketogenic cream cheese cupcakes reminded me of my childhood, although the flavor is different, because the ones I ate as a child were vanilla, these ones have a delicate cream cheese flavor.
These muffins or cupcakes can be covered with vanilla icing, cream cheese, or simply with red fruits, to make them more suitable for a special occasion. For me they are an excellent option for breakfast or when I crave something sweet in the afternoon, that's why I don't top them with any frosting.
Well, this is another delicious, sweet recipe to pamper the ones we love the most but taking care of their health. For all the sweet tooth at home, I hope you are encouraged to make this recipe, it really is very easy.
The recipe is for 12 keto cream cheese muffins.
Nutritional values per muffin: Calories: 160 | Proteins: 5.8 g | Fats 14.2 g | Net Carbohydrates: 0.5 g
INGREDIENTS
1 ¼ cup (150 g) almond flour
1 teaspoon (5 g) baking powder
¼ teaspoon salt
4 tablespoons (60 g) butter at room temperature
¾ cup (180 g) erythritol
100 g cream cheese at room temperature
1 teaspoon vanilla extract
4 eggs at room temperature

One more thing: very helpful the ingredients are in grams not ounces /cups or whatever nasty measurements all over the world
