2 eggs
1/4 cup mustard
1/4 cup hot sauce
2 tsp garlic powder
2 tsp chili powder
Salt to taste
Dry batter:
1.5 cups flour
1/2 cup corn meal
2 tsp garlic powder
2 tsp chili powder
1 Tbsp salt
2 tsp paprika
1 tsp black pepper
Sauce:
1 cup mayo
Zest and juice of a lemon
1 Tbsp capers
1 tsp Dijon
2 tsp honey
1 tsp garlic powder (or 2 cloves garlic)
1 tsp chili powder
Salt to taste
4 sub rolls
Lettuce

This looks great, but you got the bread all wrong. All New Orleans restaurants use a french bread, usually made by G.H. Leidenheimer. This bread has a nice chewy and crusty texture. I don’t think there’s anything wrong with making your own spin on something, but this isn’t really a po boy. ALSO WHERE ARE THE PICKLES!!!
