Guga, you've done an experiment for max cook times how about trying minimum? What's the shortest amount of time you can prepare a sous vide steak and have it be good?
that depends on the type of meat, but when cooking sous vide the general rule is; temp is doneness, time is tenderness. Just make sure you're over 131F or fat won't render.
He wont, probably because he doesn't want to end up shitting for 3 days straight just to undercook something
Also, google the baldwins guide to sous vide. This method of cooking is not experimental; it is science. All minimums are clearly explained.

You should try to do something with mexican "Tajin" and a nice Steak. Its a seasoning and basicly dried lime/salt/chilli combined to something amazing! You will love it!

Guga do a dry experiment where if seasoning before dry age is better. Have a control bag and have one seasoned with salt and one with only spices but no salt.
