To give myself more healthy food options, I’ve been working on making my own flour tortillas from scratch. While I am working out the best recipe for tortillas, I am also keeping track of how much it costs to make my own versus buying store bought. But the price isn’t a big concern at the moment. My biggest concern is being able to make food that doesn’t contain ingredients that makes me feel unwell. There are very many ingredients in store bought foods that I have an intolerance to. So in that respect, I am very happy with my first couple of batches of homemade flour tortillas.
I also spent a good portion of the day trying to get a small project finished in my van. But the project wasn’t nearly as successful as the tortillas.

My name is Scott and in 2015, I bought a Ram ProMaster City to live in. Even though I didn’t know much about RV’s and campervans, I set about building the van out as a minivan camper. And in April of 2016, I moved into my minivan full time.
Over the years, I’ve learned you don’t need to have a big skill set to build your own campervan. And that living as a minimalist and utilizing solar power can be a less expensive way to live. I’ve also learned that a minivan can be a very comfortable home.

I've tried many different types of those breads, and they always have one thing in common (which I think is the reason you now realized the taste difference) is that they stink! They have an awful smell to them, the bag, etc., and the taste is terrible. I attribute that to the preservative they add to the food for shelf-life. The best way to enjoy the true taste is to make it yourself since you won't be adding preservatives. But it amazes me how, when I ask people about the taste and smell of the package, etc., they always tell me they don't notice anything, or that they taste great. People can be so stubbornly synthesized to these things. I see this all the time. At least now, your eyes are opened!

I do enjoy the DITL vlogs. Lots to appreciate here... mostly I've been thinking about how I "envy" those perfectly built vans with their cabinets and fancy gew-gaws, but my own van-life beginnings are looking much more like what you've got going on. When I "stress" about what things look like, I find myself thinking "what would Static do here" :D
It’s difficult not to compare with what everyone else has or is doing.
That’s also the beauty - each space unique, developed to fit the life of the person(s) the vehicle carries. A time to set aside “keeping up” notions

I now saw that you bought a back pack so The idea of a shoe bag is out of the question but I want to commend you on your kitchen set up and your van layout. The fact that you have a sink and countertop with stove is great. I believe you said you have on demand hot water? Fancy isn’t always practical in my view. Function wins out every time. Your videos stay low-key and simple......i like that. As a truck driver at my age now, i know the maze of stuff a person has to avoid food wise to not become sick. As you age, your body changes.....and, what you used to be able to eat and drink......you simply can't anymore. So, i really do understand. Stay SAFE!

I always notice how lightly you shake your oatley container. Well, I shake mine violently to produce a lot of foam for my coffee. It's tastes so good!
Two things here. I don’t like foam on my coffee. And I edit out the Oatly shaking because it bugs me to watch. Haha

When you can't find what you;re looking for at Ikea, Target, etc. go to a thrift store. Because the Salvation Army Thrift Stores are usually a registered charity, they probably will not charge sales tax. But try other thrift stores as well.
I so enjoy when you nomads, cook. Especially, like when we go shopping, interesting to us what others like and eat. Than again, we get introduced to new things, to try. Your torts, always look good. Muy bien.👍

It’s funny that so many people say they have food sensitivity and they really don’t when you know somebody that really struggles with how their body reacts to specific foods you totally understand where you are coming from and how careful people will be to not put themselves in the position. Don’t worry about the shape of the tortilla that just tells you it’s homemade and not mass produced.

Loved all your camera angles and efforts to find the closest thing for clearing clutter ! Lots of variety and what one of your days can be like. I also love falling asleep with rain and thunderstorms 😌 I lived in a motor home while traveling with my nursing career from 1992-2000. And, when any type of rain came it was very intoxicating, relaxing and just amazing. I once had a cassette tape titled “Thundering Rainstorm” that I wore out when I once experienced difficulties falling asleep. Lol
Do you have to use a moist cloth to clean the solar panel ? It seems like it could scratch easily ?

Wow, have the same food thing. Sooo painful! I'm so sorry you are dealing w that. But totally understand. Corn (and anything derived from it incl vinegar, citric acid, etc) is a big one for me. Yeah, it's not always cheaper, but much better for the bod in many cases! 👍🏼
Wow, love the making of the tortillas. I'm going to try this. Shows what you can really do on the road and in small spaces. I hope you ignore the unsolicited critical comments. They are losers. A lot of food is very easy to make. In my humble opinion, we should all know how to use raw ingredients and make our own food. Not only is it way more healthy, but tastes better. If you can store the bulk ingredients it's less expensive. Also making small batches so there is no waste is a skill in it's self. San Diego is beautiful.

Good morning Scott, I have a shoe storage hang-up hanging on my back wall. Super cheap (got one at ikea) , couldn’t live without it, holds almost everything especially little do-dads! For better security I hung it on 2 clips. You can tailor the length by cutting in between rows. The shoe pockets are deep, stuff will not fall out. Works great!
I 👍agree- everything is better at the ⛱Beach! And I have tried to make my own tortillas- still in the perfecting process 😊 Tortillas can be expensive to make organic and with different grains. Happy Cooking Creations!

Can you find a Container Store? The closet items have a multi-pocketed device that hangs up. Maybe Walmart too, might have the clear pockets so you can see what’s what.. it’s a pocketed organizer with several pockets, one above the other. You can cut some off to make it shorter.

I’m not a cook, but I used to make tortillas when I lived in an apartment. I’m impressed that you are able to do that in a van. But, hey… you were able to make pizza from scratch, so this shouldn’t surprise me.

One thing that I have noticed is that flour and baking goods are on sale around holidays like Thanksgiving, Christmas and Easter. I usually stock up then. I live near King Arthur in Vermont, where they have a fantastic store, cafe and large area where one can take classes!

You may have food sensitives...I have a few food items that I am sensitive to also...since you can't use the vegetable oils try ghee...I enjoy your cooking and coffee making because I am also a coffee lover (somewhat a coffee snob)...
Yes the cargo nets are good for keeping things off the floor or table space but I have found that they are not the best for organization or quick access and true it looks messy- But I must say your cooking area is very tidy and organized! I'm interested in your stove- is it propane or butane and what brand? Thanks for the video and safe travels!

I used to have a small tortilla press. Lost it somewhere but I don't think it cost much. We want your recipe.
I’m still working on the recipe. My Aunt made flour tortillas every day and never used measurements. She also only used a tortilla press for corn tortillas.
Would you mind sharing where you bought the stove and is it connected to a 5 gallon propane tank?

There are ingredients in prepared foods that are not good. I make those tortillas also (if you fry in oil they puff up 😃). High fructose corn syrup is high on my list now to avoid. Use flour, salt, baking powder and warm water. You don’t actually need oil. You’ll get used to the way it should look and won’t even need to measure (about 1 cup flour, 1 tsp salt, 2 tsp baking powder and warm water to correct consistency).

Your van looks to be the same size as my “project” Transit Connect. Why do you have so much space? My bed is 31” wide X 73” long barely leaving room for the refrig. You seem to have a whole kitchen there. Did you make a build video or is it the result of 5 years on the road? Great videos, thanks so much.
I’m not sure I understand your question. I do have a van build playlist with videos that discuss how’s and why’s of my van.
I think we decide what is important to us and build out our vans to suit our needs.
So crazy how sick you get from certain ingredients. Kind of a blessing and curse at the same time. Curse cuz you get so sick but a blessing cuz it forces you to eat healthy! Being forced to eat healthy is what we all need as americans in this country right now. I have such a hard time with eating healthy! Great video

Serious question: If you had to do it all over again in building out your van, would you still prefer ‘barn doors’ or a ‘lift gate’ option (assuming that option were available) for the rear of the van?
I like the ease of use with the split doors. I can see some benefit to a lift gate. But not sure I’d like opening a lift gate on a daily basis.

Along those lines, you should do a “things I would do differently next time” video if you have anything to point out.
Thinking about it a little, if I weren’t (unfortunately) mostly city bound, having a lift gate might be cool to use as a back porch.
I totally support you eating what you need to eat no matter what it is. Only you know what your body needs. I also eat a special diet and do believe that I have addictions to or at least bad reactions to most manufactured food. We have a right to know what is right for us and as to judgmental pple who say anything at all about it: eff 'em
