    There is a full documentary on the topic. A guy sought to eliminate starvation in the world, circa 1950s, so he hybridized the gluten head on a wheat stalk to create more protein, then had to modify the stalk to hold up that big head. It worked. Millions of people could eat and stay alive. Meanwhile we never had the chance to adapt to the GMO gluten so it makes millions sick over time. I am also sensitive when I have too much of it but I am still working out the mystery of the things I am sensitive to. I know the other unmentionable symptoms you so graciously left out of your chat today. Spelt and making my own tortillas is now on my list of things to buy and do. Thanks. ❤️ good video.

      Is it also the glyphosphate that causes reactions to eating GMO? Some say no, it stays in the soil. Some say it is found in the wheat.

    Yes your doing the best thing by making your own tortillas etc! It’s all about our health and noticing how we feel after we eat something and many people don’t pay attention. So you keep doing what your doing , your so right!! Enjoy ! 🌮🌮🌮

    Homemade tortillas taste so much better than store bought. Plus as you mentioned you know what you put in them. When my kids were young I made them everyday. But haven't made them in years. 😊

    As a diabetic I completely understand the dangers of packaged food and eating out. And as time goes by, I find I prefer eating more cleanly anyway.

    very good video, thanks for all the info.. another type to try is: (Einkorn) flour is produced from the grains of an ancient species of wheat that was domesticated in the Fertile Crescent roughly 12,000 years ago. Unlike modern wheat, einkorn has a single grain on each stem. It's a hardy plant that thrives in even the toughest environments. I think Jovialfoods makes it

    I totally understand the intolerance.....this video speaks loudly to me! I used to be able to eat just about anything, but now I feel the effects of various food ingredients, preservatives, etc. Thank you for this video....it makes me feel better knowing it's not just me! So many people I know don't understand me when I try to tell them how different foods affect me.
    You are so relaxing to listen to!

    1. Making tortillas fresh are so much better tasting. 2. You can store the masa better over time than bags of pre-made tortillas. 3. It might be cheaper, but I'm not sure.

      Me too, less & less. We do have some small local restaurants that are careful about cooking oils & ingredients, so we like to patronize.

    :: dons chemistry teacher hat :: Methanol, ethanol, isopropyl are specific types of alcohol (general class). Gluten (specific) is one type of protein (general class). Glutenin proteins are long chains which make your dough elastic. Gliadin proteins make the dough stretchable without tearing. Combined they make gluten (a stretchy, elastic ball of proteins). :: puts on van fan hat :: It's heartening to see someone make real food while living full time in a van.

    As a kid I never knew about food intolerances. But my brother now is intolerant to garlic. Not all garlic even. From our discussion it appears to be the oils in the garlic as dried garlic doesn't affect him. One of his first things that happens is, that it starts to affect his ability to breath. So if it happens then he just stops eating anything that could possibly contain that ingredient. I saw this happen to him at a restaurant we were at.

    I have to avoid lactose and sucralose sweeteners, my body simply does not process them, and if I do consume them I pay dearly, and sometimes those around me have to pay lol

    As usual Scott, thank you for the deep dive! If you are ever in Spokane, WA, there is a bakery that makes their bread from local, pesticide-free grains (The Grain Shed). Thursdays they make "Dinkelbrot," made from 100% spelt. I entirely agree with you on budgeting time to make your own food exactly for the reasons you discuss.

    I wish I could send you a photo of my spelt bread. I buy organic spelt berries in 50 pound bags for about $100. I grind it just before mixing my bread. I developed a recipe that makes a delicious airy spelt bread using freshly milled spelt berries, eggs, olive oil, honey, water, Redmond salt, and yeast. I make 6 one pound loaves per batch. It freezes well. In addition to the weak gluten structure (which makes it easy on the tummy), it doesnt spike blood sugar.

      I couldn’t afford to keep buying the spelt flour, though.

    If I may suggest, try getting a low frequency water jug that convert your drinking water to resonated water. I sell them locally in Malaysia but am sure you can get it in the US. Many testimonies from customers who had recovered or improved from their conditions like gout, migraines, arthritis, gastric, pre or post cancer, etc. It was developed after the Chernobyl disaster in Ukraine in 1986. Basically just like normal water, it actually helps in our body hydration which is the most underrated by most.     Yeah, later in life I learned that wheat and almost any milk products don't like me. So I make my own tortillas too. I can (thank goodness eat a wee bit of cheese but only if it's high quality - vons makes an extra sharp white cheddar but we buy a big block and I don't think you could store it. I can eat spelt and rye without issue and they are good together. Eat what works for you and take care of your own health! No one is going to do it for you! You deserve quality food and no one is going to be as good to you as you can be. Thank goodness for oat and almond milk and on special occasions, lactose free frozen treats.

    sometimes I get so envious of people who can eat like beef stew, canned foods, high in sodium, etc. 365 days a year and feel great! I only really ever feel great when I'm vegan and 80% raw but that is a lot of work and some of us need to work for a living ... boo. You do you bro. That migraine is nasty! Bravo for making homemade foods! I wonder if solar, lithium working with induction cooktop would save some money. I use induction (duxtop at home), works on cast iron and carbon steel.

    I grew my own flint corn last summer and plan to make tortillas the way the natives of Mexico process the corn (Nixtamalization) to make masa. I need to find a good stainless steel pot before I make the attempt.

    I totally understand food intolerances as I have some of them also. I can still eat out but not just any where. I’m eating more natural and organic. As you have said it’s not easy on the wallet. But we do what we must

    So sorry 'bout the food issues .... I've had migraines .... 'put them right along side of child labor .... A wonderful eating plan I discovered forty yrs ago is Fit for Life
    .... Basically .... Fruit for breakfast/veggies & starches for lunch/veggies &proteins for dinner .... When I read the book in the early eighties, it made a world of common sense to me ....if you stick to it, it will clear up various and sundry health issues and you'll drop excess weight ....     Like you, I control what goes in it. Less salt for one. It tastes so much better too. I get migraine with sea salt or pink. Anything high sodium messes me up.

    You gotta get tough, buddy. I grew up eating crows, moose and bear meat in the Yukon. Eating anything from a store seems so much easier and safer now that I think of it. Slow exposure to things will build tolerance. I learned tolerance of exposure by eating Del Taco day by day. I'm rooting for you to learn to love trans fats and it will only make you stronger! I'm down to only 1 pound of margarine a month. If I don't get at least a few pounds of trans fat in me a month, I will feel sick. You're welcome!

    Great choices for better health and healing totalmente agree. I've used spelt in baking (mix w/rice flour) and pancakes.

    Scott always a great vlog from you my friend. Please can i ask , so when you have made a batch of tortillas do you fry them when your ready to eat them please. Also how long roughly, is a couple mins either side. I take it this gives them their crunch. Thanks Scott i need a great cup of coffee now xx

      For flour tortillas, I heat them directly over my gas flame for a few seconds each side. I prefer flour tortillas when they are soft, not dry and crunchy.

    A large number of scientist say it isnt the gluten in wheat is not wht we are allergic to but the poisons we spray our food with. Here we spray wheat with a chemical right before harvest but they dont do tht in europe and they have less gluten intolerance than we do. It's a problem tht we have.

    I've been thinking. Here if you buy a house you have some extra costs like notary fees, but if you keep it for enough years inflation will get you that back from the resale value unless there's some unusual market fluctuation so at the end of the day, a house can be a zero sum game. You can argue that there's upkeep, there's some costs to keeping a car too but I guess altogether there's some savings in your lifestyle in comparison.
    Still, I hesitate to think whether it's sizable enough financial gain to justify all the sacrifices you have to make to live the lifestyle.

      From my experience, both types of living incur high costs. But with vanlife I have almost no sacrifices to make. Home ownership came with multiple sacrifices and hardships.

    I get a headache if i eat chocolate. I found out (because i wasn’t born with that) when my friend gave me a pc of chocolate cake with ALOT of icing & when i ate it it gave me a migraine fotr 3 days.

      Maybe overcooked them. Maybe the recipe. The first few recipes I tried seemed to make dry, brittle tortillas.

      @@StaticCamperVan Thanks. I've actually found a decent tortilla commercially produced, it's made with olive oil, too. La Banderita, carb counter. I buy those even though I don't do keto. I'm in Nevada, close to you. You may come across them somewhere..

    That looks like a very thin bit of bread = bake a loaf be much better idea - Coleman Folding oven or that kind of thing - frying bread has to be a bad idea - used a bread machine for baking bread in - works well - live in England when was as bit younger did bake some bread in woodfired oven = called a Rayburn - have tryed cooking bread in a frying pan - to oily for me

      Small loaf = 4 cups flour sometimes mix brown and white - sunflower oil Not rapeseed as that is gm - salt and sugar yeast - h2o 1 1/2 cups - I do not kneed it very much as I like the loaf more like a cake - So long as I can cut it - All is well - loaf lasts about 2 days - Must try making some hard tack sometime

      You’ll get it. I had a problem with the tortillas getting too firm because the stove wasn’t hot enough.

    Scott - maybe you have already seen
    “Super Size Me”. A fellow documents eating at Macadonalds for All his meals x one month. Each time he is offered to super size the order, he accepts. Poor fellow. He also documents his lab results for liver function tests. We know how this turns out - but it somehow made for a compelling documentary!
