- At the Akal Travel Center truck stop in Laramie, Wyoming, the Indian food that Mintu Pandher and his staff are cooking up in a small kitchen attracts truckers and locals from miles around, with food they can't find anywhere else along Interstate 80. Turns out there's money in all those smells of turmeric, coriander, and other spices rarely used in truck stop cuisine: his café is a hit, especially given the changing face of trucking, since nearly 19% of long-haul truck drivers in America are now immigrants. Jim Axelrod reports.

I have a little grocery store down the road from my farm here in Washington state. The family that owns it is Indian and they have introduced me to the flavors of the subcontinent. Great food and good people!

@F U B You are absolutely right, non veg is Mughlai cuisine in India. And vegetables are prepared so simply in India and the variety of vegetables is just amazing. I love South Indian food, that is so healthy too, everything is fermented and light and uses nutritious vegetables and oils.

I am surprised that the TV crew did not pick up on the fact that this looks like a more "sanitized" version of the "dhaba" - the ubiquitous eatery alongside Indian highways. most of the clientele are truck drivers and many of them look like Mintu.
In that sense, the sheriff is absolutely correct - Mintu recreated an Indian roadside eatery in Wyoming :-)
I like Sikh people. There is a large community where I live north of Sacramento and they're friendly, nice people. Most mini marts and gas stations are owned by them plus a large number of fruit orchards.

Indian food isn’t that healthy. When my mom (we’re Indian) was having health issues we went to our family doctor and she (also Indian) said eat less Indian food. It too fatty and oily.

If Indian food became as ubiquitous as McDonalds or Starbucks in the U.S. we'd all be so much happier. The colors, smells, and flavors are so delightful, and Americans would eat a ton more veggies in their diets.

As Indian American that grew up in America back in the 80s and 90s, it blows my mind how much more mainstreamed us Indians are compared to when I was a kid. I remember in 1985 and 1995, most white kids, latino kids and black kids thought Indian food was "yucky looking" and gross, and never wanted to try it. Some didn't like the smell, which varies wildy depending on what you are making. It was only around 1999/2000 that I saw a change, and even then, that was the start of a change for Indians in America. Here we are in 2022, and I have white coworkers showing off their Indian food curry lunch they made the previous night. Mind blown! The younger Indians in America today have no idea how "odd" and "foreign" we were all considered in America back in the 80s, 90s, even early 2000s.
