There is a tool by Wilton products that is designed to core the center of a cupcake. It makes an even hole each time so each center gets the same amount of filling. Just a suggestion.

That's a tall cupcake even without the frosting. I've never seen a pan or liners that size for sale. I like the way you do your lemon curd. I make mine kinda similar. Everything but the zest gets put into a bowl then beaten. It will look like it's spilt but once you put it in a pan and start to heat it up it'll all come together. If you do it this way you don't have to strain it. Pour your curd into a dish, swirl in the zest, put plastic wrap on top so it won't form a crust then let it cool off. Use what you need then either put the rest in the fridge or store in the freezer. I'm going to take a look at your SMBC recipe next. The amount of curd you added seemed like a lot. I thought it was going to mess up the consistency of your buttercream but 👏 ....
