  • Hello everyone, welcome to another episode of Akira's Sushi At Home!
    Today we are introducing you how to make...
    Atsuyaki Tamago(厚焼き玉子) an Edomae style Omelette.
    There are two style in Tamago, one is Dashimaki which derived from
    Kyoto and is known for being juicy with full of dashi;
    other being what we are showing you today :D
    This Atsuyaki Tamago was first served in Edo period,
    for busy and hungry Edo's workers who were looking for a sweet energy booster.
    We altered our restaurant's original recipe to something that is easier to make at home.
    Ingredients
    ●6 Egg Yolks 卵黄
    ●2 Egg Whites 卵白
    ●75g Sugar 砂糖
    ●50g Yamatoimo 大和芋
    ●50g Shibaebi (Ground Brown Shrimp) 芝エビ
    ●65g Cod タラ
    ●2Tsp Mirin みりん
    ●2Tsp Soy Sauce 醤油

    Thank you so much for this recipe! I have been searching for this forever. 99.9% of the recipes you find online are for the folded egg and not the ones they serve at the sushi restaurants

    A long time ago, I was in a sushi restaurant, and their tamago nigiri has egg slices that's smooth on the sides (not dashimaki). I wonder if this is the tamagoyaki they used for it. I never asked them, so I never figured out what it was. I couldn't find any other place that served that kind of tamago nigiri.

    I know some recipes used raw shrimp instead of cooked, what the differences?

      Fei Yang Zheng san arigato for your question! Indeed some recipe does use raw shrimp and that's perfectly fine as well! Using cooked shrimp simply gives an accent to tamagoyaki's texture..
      it also brings out shrimp's frangrance more ☺️

    Hello, I appreciate sharing the informative recipe in publically. But, I have a question to ask, I am in Australia and I couldn't find cod fish fillet and yam potatoes in here ㅠㅠㅠ. Will you please let me know what I can use instead ?, I would appreciate if you could share some more !!!

    My daughter really love tamago but she allergies shrimp. What can I use for replace shrimp in tamagoyaki ?

      Wittawat Khwan san, so nice of you to plan cooking tamagoyaki for your daughter! If she is allergic to shrimp only, then you can replace it with raw scallop. If scallop would also be a problem, you can simply used cod only..flavour are going to be a bit different but shrimp is there mainly to add a spice in texture & flavour - so I would not say it's mandatory :D

    Amazing Atsuyaki Tamago, my favorite dishe! How size your pan? I have a tamagoyaki pan with 18x18cm is it ok for your recipe?

      Love Atsuyaki Tamago too, Éder Nascimento san! 18x18cm pan would also work no problem, we are using 13cm x 19cm FYI, so it may be better to adjust oven time a little shorter :)
