The difference in our country is that here we chop onions and garlic and incorporate them into food. There are actually other differences, but one thing that bothers me is removing onion and garlic from the dish.

Why do people add oil when their cooking bacon, it’s full of fat hence has its own oil. Just adding fat on fat. Oh and 1 tbls of salt that seams excessive. This could be a great recipe with some adjustments.
