Just a few recommendations though. 1 tsp of baking powder per 1 cup of flour. This helps the batter stick better. And also freeze the curds about 30 mins to an hour before you fry them. This makes is so the cheese doesn't melt before the batter is ready. Otherwise you end up with melted cheese and it escapes the batter into your oil.

I want to try your recipe for cheese curds. Can anything be substituded for the beer? Also if you keep your oil free of the floating remnants, it will extend the life of your oil.
1. Freeze the cheese curds prior to cooking. It keeps them in the batter when cooking. 2. Roll the cheese curds in flour BEFORE you put it in the batter. It helps the batter stick better. 3. Don't put too many cheese curds in the dryer at once because it will cool the oil down.

I did this with vegetable oil in a saucepan on a glass top stove. My cheese curds were partially frozen. I used heavy cream and 2% milk and seltzer water. Didn’t have beer or buttermilk. 375 was horrible for this setup. First batch was instantly burned! After the oil came down to under 250 more like 175 it cooked perfectly. Just some edits for other people who may not have all the same stuff.
So Happy That you tried our recipe!! Sometimes you cannot get away from some of them melting, but make sure your oil is very hot. Like at least 375 F. Also make sure your batter is thin. 2 minutes in the oil til golden and pull!

Yes! You can use for every one cup of milk, 1 tablespoon of lemon juice (fresh or bottled), or one tablespoon of white vinegar.. Let it sit for five minutes.. when its slightly curdles, it worked! Buttermilk substitute and no need to run to the store! Or you can try with regular milk and maybe add a little extra flour for thickness! Thanks for the question! I hope this helped! Enjoy!

Use a Wisconsin beer. Freeze your curds first the batter will stick better and the cheese wont come out. Looks good though
Its crazy how the minnesota state fair ones are $18 the fact their just cheese curds with batter and deep fried and very simple yet very expensive.. 🤔
