They came out so good and I’ve been making this recipe long before Clover I start making them actually during the 90s and my kids love them. And the other day my daughter came in and she said mom remember these she came with two bags from cheese castle, I haven’t been making those a long time but today I am going to make them and yours came out delicious too. I am an employee of Culvers, At least in the locations I have worked we get the cheese curds pre battered when shipped in, but it's not a normal batter and it's not a bread-n-fry, It's a really thick batter, almost the consistency of mash potatoes that sticks to the cheese curds.
not sure if this information will help in the revision of the copycat, but I feel like it's important because it gives the breading/batter a very particular texture, and it's a tactic that a lot of fair stands use as well is a very very thick batter.
