      "Millet" keval ek prakar ka nahi hota, balki kai prakar ke millets hote hain, aur har ek ke apne swasthya laabh hote hain. Sabse best millet ka chayan vyakti ki swasthya sthiti, unki aadat, aur bhojan ki vyavastha par nirbhar karta hai. Yahaan kuch pramukh millets ke bare mein jankari hai:
      Jowar (Sorghum): Jowar ek prachin aur popular millet hai, jo ki gluten-free hai. Ismein fiber, antioxidants, aur essential nutrients hote hain, jo aapki sehat ke liye mahatvapurn hote hain.
      Ragi (Finger Millet): Ragi bahut adhik calcium aur iron ka strot hai. Ye bhojan ko poshit karta hai aur bones ko majbooti deta hai. Iske alawa, ragi digestion ko bhi sudharne mein madad karta hai.
      Foxtail Millet (Kangni): Foxtail millet bhi ek accha vikalp hai. Ismein fiber, protein, iron, aur magnesium paya jata hai. Ye digestion ko bhi promote karta hai aur aapko energy deta hai.

    The flavor is about right. Adjustments with the hing (touch more at the end) obviously per taste. I love a strong hing influence. I want to make this recipe exactly explained; caveat, soaked foxtail millet dried, and ground into a course powder. Well maybe 75% of it. Obviously need some texture.

    Very nicely shown recipe.
    I often make kichdi as well as Bisibelebath with millet..I use little millet or foxtail millet. I have also made with quinoa. All come out very well.

    Okay, I’m a white boy…. pedant for Indian cuisine. Made it. Good…. Add a touch more of Hing at the end, carefully. Depending on the spice level of your chilies, amend with Kashmiri chili powder to taste. Not bad, but definitely not as creamy as I would prefer. I hunt for perfection, I guess that is exclusively dependent on the palate. For me, a breakfast dish should be somewhat mild, smooth and creamy (considering the dish). Maybe I didn’t make it right (non-hulled foxtail millet). The dal turned out perfect. Your presentation is great, however, please get someone to translate the steps in the comments. Several steps need clarification. As a seasoned Indian cook, I get the basics, but some things in the video definitely need translation or clarification.
    The khchidi isn’t bad, actually very good, but could be a tad bit more smooth.

    I soaked the fox millets overnight. I wanted to make pulao so i added onion, 🥕, peas, potato and once these vegetables were 70% cooked added fox millets. Quantity wise fox millets was one katori so added two katories of water and cooked for 12 minutes. After 12 minutes when checked fox millets was not cooked and after cooking for 20 minutes still fox millets was still hard and I ate as it is. Did not like it much

      It needs 6 to 7 times water to cook in open kadhai ook with vegetables see again and again takes 1hr or little more to cook properly

      Steam the soaked rice for 10 to 15 mins with the soaked water in a fine mesh steamer that fits well into the vessel with water . Close with lid and mix now then. Then follow any recipe. Works well.
