Jerk Marinade // Authentic Jamaican Jerk Seasoning Recipe

  • This homemade Jamaican Jerk Marinade is by far the Best!!! I have tried a lot but nothing compares to this. Loads of flavors.

    *Ingredients*
    Fresh Scallion and Thyme
    Celery leaves or Broad leaf thyme (optional)
    Garlic gloves (4-5 pieces )
    Ginger 3-4 small slices
    1 tbsp pimento seeds (all spice berries)
    4-5 pimento peppers ( for flavor) if available
    1 scotch bonnet pepper, more for more spice
    1 onion (chopped)
    1 tsp salt
    1/2 tsp black pepper
    1/2 tsp grated nut meg
    1-2 tbsp browning
    1 tbsp sugar
    1 tbsp vegetable oil
    white vinegar
    Slash of lime or lemon juice
    Use this recipe as a guide as I did not measure the ingredients.

    I tried this recipe today because the Dunn’s river paste I bought was too hot but this was perfect and I could even eat it on its own without blowing my head off! I’m going to cook sweet potato and butternut squash curry now with it , we’ll done Raquel!

    I've always wondered how the Ja Jerk Seasoning tastes so authentic. Thank you for your very explicit recipe! Now I know...I will be adding ingredients like pimento, ginger and nutmeg to my Trini-style Green Seasoning.

      A bit of this Jerk Marinade, BBQ Sauce, Ketchup and some sugar, and mix well

    this looks absolutely amazing. how long do you think i could keep it in the fridge for? does it freeze well? i'd like to make a batch and just keep it somewhere.

      It freezes very well, the vinegar that was added serve as a preservative, so if it’s refrigerated… it should last for a pretty long time

    We can’t get pimento peppers. The only thing available is sliced pimentos on a jar. Would they work ok for this recipe?

      The pimento peppers are totally optional, they are not traditionally part of the Jerk marinade. The scotch bonnets are the essential ingredient, along with the pimento berries or powder and thyme

    Hello I watched your video and it looked delicious, I want to know did you make the wet jerk seasoning or you bought it like that, I looked up wet jerk seasoning and google is showing the seasoning “dried” or “ dry rub” . Is it the same as Jerk Marinade? I want to get the right ingredients and seasoning you used in video. thank you.

    Will it still be good without pimento peppers? I like the spicy flavors. Can I add a few more scotch bonnets for consistency instead of pimento or will it change the recipe to much?

      Hi Wyteman, add as much scotch bonnet peppers as you like, the pimento peppers could definitely be excluded, wouldn’t affect the recipe at all !

    It would be nice to add some peach and honey to this marinade as an alternative to this one. Do you think I should grind up my pimento berry first mi nuh won a crunchy, crunchy jerk lol.

    Is the browning just food color? I that browning necessary? I can't find where or what that browning is.

    A lot of jerk recipes use orange juice and soy sauce, what do you think it adds?

      The soy sauce is a substitute for the browning and the orange juice is a substitute for the lime juice.

      Browning is sold in almost all supermarkets, add just enough to the marinade to acquire that Jerk Color

    @racsfood or for the group…are all these ingredients native or found growing wild in Jamaica?
    I believe I understand jerk originated from African cooking methods adapted in Jamaica. Great flavors! So many ingredients! Had me wondering what the process looked like in colonial/slavery era and if all that stuff grows there or if it was brought to Jamaica.
