  • INGREDIENTS:
    2/3 cup Flax Seeds, Raw and unprocessed
    6 cups water
    That's all you need to prepare the meringue.
    Tip: Make sure to strain out gel as soon as it is done or else it will get more thicker and you won't be able to strain.
    Through this video demonstration, learn how to make Flax Seeds Gel and turning Flax Gel into Meringue!
    1/4 CUP FLAX GEL + 1 TBSP EGG REPLACE POWDER = 1 LARGE EGG
    WHIP IT AND FLAVOR IT UP!
    These days, I keep Flax Gel in my freezer all the time. I use it in my all baked desserts whether it is cake, cookies and much more.
    I have been using Flax seeds in baking to replace eggs for many years now but there was only one problem that flax seeds would make end product little hard after refrigerating or the next day. With Flax Gel, no problem even though it is derived from the same product.

    This recipe is just incredible. I cannot eat eggs.I use it flax seed eggs but I just did not realise that meringues were available for me too!

      Trust me, eating cholesterol does not increase you blood cholesterol. Infact eating fat and cutting carbs makes you lean and improves your cardiovascular health.

      Veglife Channel Yes, this gel can be used to replace egg whites in recipes. And for 1 egg yolk, I add 1 tbsp of Garbanzo flour and works great.

    What a great idea~ I'm gonna try this, hoping it doesn't have a strong taste like aquafaba. Do you really have to boil it for that long, though? In my experience it thickens as soon as it cools down. I wonder if it would also work as a mayo-type dressing or if you can bake it and make meringues.

      To stable the foam, you have to use versa whip or egg replace powder

    Hello I tried to make this merengue 2 times but I could not get this to work.
    Can you please tell me the recipe in grams please as maybe I am getting confused with what cup measure you are using.
    I made sure the Lino slime is very cold before putting into my kitchen aid but it just remains slimy.
    Perhaps its the type of seeds? Mine are more yellow? Can you please advise:)

      European and metric cup measurement is 250ml pr cup, while US and Imperial cup is 237ml pr cup. Hope that is useful, even if a long time has passed. Don't know if you figured it out? BTW! Flax seeds comes in dark brown and golden, so you have the golden ones. I have trouble finding the golden ones here, si I mostly use the dark ones, but have some golden ones sitting here for when I don't want dark specks in something, but in general, I have used them in the exact same way, never noticed any difference, even if I only used them as egg replacement, didn't try meringue yet.

    From experience with egg white meringue I know the consistency keeps its form longer when it is whipped at a low speed because it creates smaller more uniform air bubbles that keep more stable than large irregular bubbles that form from high speeds. It takes longer to whip but makes it more creamy. The same might help the flax gel keep longer

    Hi! Thanks for sharing your recipe! Just wondering if you've tried this yet with flax meal instead of seeds. Also wondering, since it becomes a sticky gel, is there some way to utilize this to create Rice Krispie Treats? Just seems like between this and aquafaba, there should be some way to make them w/out agar agar or the like. Thx!

      It must be a cultural thing -- Rice Krispie treats aren't really "baking" per se. All they are is a mixture of the cereal Rice Krispies (a cold cereal of puffed, crunchy rice) mixed with butter and marshmallow. What I was wondering is if there's some way to adapt this gel into the same use as marshmallow (as opposed to egg), considering how it thickens and the sweetness of it.
      I don't eat marshmallow, b/c it's made from animals, and vegan marshmallows are very expensive.

    Hi bhavana, tried this recipe, but once I have got stiff peaks from flax gel added sugar powder and egg replace powder. After that the mixture dint have the peaks and it became watery. pls let me know what mistake I might have done

      +Natalia Tsangaras you can but follow my recipes of meringue and macaroons cookies. I use egg replace powder to stabilize the meringue

      You can't bake it just as it is. It does not tolerate heat well, according to others. If you want to bake meringues, you need to use aqua faba meringue.

      Maricar Malati Molisak I bake at 255-275 F and take takes about 25-30 minutes but keep an eye on it when you bake first time and also don't forget to add egg replace powder to keep meringue stable.

    Hi Bhavna, I have a hand mixer and it seems I will never reach the stiff peaks... I get stuck at "pale" consistency and can't go further, I've tried several times but always end up with an overheated mixer. Do you think there's something I can do to help it reach that consistency quicker? Have you tried doing it by hand, or you just assume it takes about 25'? Maybe thickening the gel a little bit more? I'm clueless! Thanks in advance.

    ahh it's magic! I second soniakolluru 's question though - how does this taste? And how do you use it? Can it whip up just as nicely with a little powdered sugar?

    Thanks!! Lol I had been practicing with aquafaba but now I have more chick peas than I know what to do with, and I still have a tub of hummus left to finish! So I'm going to try with ener-g and flax seeds for the next batches :)

      It needs versa whip or egg replacement powder to stabilize

      Bhavna's Kitchen I prepared the strawberries (I used freeze dried strawberry bits) thickened with simple sugar syrup, lemon juice & Ultra Gel. I prepared the meringue per your recipe; adding sugar and Wilton's Meringue Powder (egg replacer powder). Then I folded the finished meringue into the strawberries in a large bowl; and put in the freezer. It came out delicious.

    Hi Bhavna! I tried to make this today and the gel looked exactly the same but when I tried to make the foam it didn't get passed the pale stage on your video. Is there something that could have gone wrong? I just used the flaxseed gel and whisked it for a little bit over 10 minutes. Thanks.

      +Kaio Arena you can try adding egg replace powder, it will make meringue stable as well.
