No, the output doesn't smell like chickpeas. It didn't work for me when I had tried doing it with the initial hot water but it happened this way. The shelf life of Aquafaba is not known but it has been a week since I made it and it still seems just fine. However, be sure to keep it refrigerated. The shelf life of the other recipes you make out of aquafaba will vary depending on what you add into it to get your output :)
I'm not aware of any DIY methods as an alternative.. so I believe, Electric beater is essential for this one. Regular hand beater would take a lot of effort and still won't get it to a consistency as an electric beater would.
Still, how many ml water in a glass of water??? Quantities are crucial to succeed... How much liquid was obtained after the chickpeas have been boiled in the pressure cooker? It is important to know when reducing it to "a third"...

YOU didn't get it to the proper consistency WITH an electric beater . Use a mixer or Kitchen Aid stand mixer for sure !
