    Pearl Barley is something we use all the time, every stew has it in, soups etc...we like to cook it so it still has a little bite/chewiness to it. Now i'm gonna have to make this..

    My grandmother used to make a similar dish with pearl barley and pork sausagemeat (and the chopped onion and sage). She shaped them like meatballs or a hamburger patty, but because the barley was moist, she didn't use egg or breadcrumbs to hold it together like you normally do for meatballs. She sometimes chopped up an apple into the mixture as well.

    I suspect the barley was originally added to bulk out the meat, much like the Scots using oatmeal, There was always something cheap added to mince to stretch half a pound between 4 of us. We use barley in stews and casseroles but also when cooked in a tasty stock as a substitute for potato or rice. Makes a nice change as a risotto base too.

    I use Barley in place of rice . no sugar spikes .
    The roman Gladiators only fed on Barley .It kept them fit and well .
    I was a surprised you didn't bake it in the ring ....still it looked good I bet it tasted better .
    proper food is that .

    My son is diabetic type one and for him barley oats etc are great because he injects his insulin. You're correct, it breaks down more slowly and you feel satisfied and for a diabetic type 1 the slow release is ideal. However Southampton hospital advised Type 2 diabetics to restrict the consumption. Their pancreas needs help to work and they often take drugs to stimulate the pancreas, but if you have a weak pancreas it is not a good idea for your pancreas to work overtime breaking down complex carbs such as barley as the pancreas is already weak. This did not follow Govt guidelines at the time but the Hospital told us they cannot wait 10 years for the advice to change. My son was 14 then, he is now 34. I am sure people will wade in but this came from the diabetic unit at the time under Dr Betts....RIP

      A much slower release of Blood sugar in any form is meat and fat. Carnivores pretty easily cease to be type2, type1 of course is autoimmune damage and more complicated.
      I will admit to not researching barley which I will do, but all other grains are everyone's enemy, especially modern species which we do not have adequate enzymes to digest properly.

    Rik, I have been waiting for you all my life😂
    So I come across one of your videos on my UA-cam news feed last Thursday and since then I have not watched any other videos on UA-cam apart from yours. I have literally been doing a marathon watching your videos😊 so much so that i have even created my own playlist.
    My grandma was born in 1886 and pasted at age 101 a month before my 17th birthday. She was one of 7 children and was brought up on a farm. She went on to have 12 children of her own with my dad being her youngest. The house she owns when we was growing up had a very long garden and in this garden she kept pigs which she had a deal with the butchers who would do the slaughtering for exchange of her having half of the meat and them having half of the meat. Her garden also had hens and chickens, fruit trees and a garden patch with homegrown potatoes and vegetables.
    I am the 8th of 9 children and we all experience going to my grandma's with her teaching us how to cook everything from scratch .
    My grandma used to say that the best life lesson you can teach a child is to cook everything from scratch because if they can cook anything then they will never go without food because they will be able they will be able to cook something out of nothing. She also used to say that home cooking is the secret to a long and healthy life.
    I have 8 children myself from 15 years of age to 35 years of age. 7 of them are 20 years above. I have taught all of my children home cooking. I never bothered with the silly cake mixes. They have never had takeaways very often at all because we even cook our own KFC etc. It has worked out well for me as well because on Mother's Day and birthdays my children will come round and make me a home cooked dinner. My 15 year old friends love coming for dinner and also very excited about the homemade desserts and cakes that I make.
    Your videos have bought back so many childhood memories for me and have got me so emotional watching them and I have even learn new recipes that I definitely be trying.
    Over the weekend when i have finish cooking I have even found myself saying, look at that 😂😂 while dishing up.
    Thank you so much for keeping the traditional recipes known in these times where everything is fast food and snack eating. You are a legend!
    I just wondered if I could ask I request that as it's Easter coming up could you put up something of a fish meal for the Good Friday and a lamb meal for Easter Sunday and maybe some Easter Desserts.
    Apologies if you have already done these videos for Easter as it may be that I just haven't come across them yet.

      @@BackyardChef thank you for your reply. My daughter who i said is 15 well she is actually 15 on Easter Sunday! So it was more of a Easter dessert/cake with one of your twist on it that I was wanting to give her and her friends something different from the norm. I understand that you would probably already have a busy schedule so no worries if you dont get time. I have told her as soon as her birthday is over then we are cracking on with this playlist 😀 starting with the Scottish ones because my late mum was half Scottish.
      Never stop being you because there is not a chef out there that has inspired me so much.

Over the weekend i fell asleep listening to the playlist i had made , probably because he has such a calm voice and I have trouble sleeping so he has help me out with more than just recipes 🤣🤣

    Part of the reason I love beer from the UK is because they use barley in it! Barley is a lovely grain, and combined with beef is the best flavor combo.

    My mother always used to add barley to stews to make up for the small amount of meat - this was during the 50's. I always liked the barley the best!

    I'm a single older lady
    I don't want many fussy things. I want real whole foods. I want things that don't cost too much and they absolutely have to taste good because I worked in restaurants 30 years and I can't stand bad food.

      Nope, sorry. Actual chef here, if all onion were perfect you wouldn't need the horizontal cut...
      However not all onions are perfectly formed.
      Therefore the double horizontal cut deals with an onion that is a little wonky on the inside far better than the vertical/diagonal cuts do alone.

    I make a version of this at our local Soup Kitchen: Beef Barley Casserole. Everything mixed together as per your ingredients plus cubed potato, some chopped celery, diced tomato, peas and carrots. Baked in a roasting pan for 1.5 hours, real delicious, nutritious, stick to yer ribs simple comfort food! Reasonable cost to make (always a critical factor with our kitchen as we rely on good will donations).
    A big hit with our clientele. Everyone cleans their plates, which pleases this cook!

    I LOVE Barley!!! I keep it on hand at all times, which is easy because it has a shelf life in YEARS! It tastes great, acquires the flavors of whatever it's cooked in and always compliments. It is definitely a comfort food! THANKS for this recipe!

    I think I’d love that. I love barley and still use it regularly in soups, hot pots and stews. My favourite thing is barley pudding. It’s just like baked rice pudding, with barley, milk, cream, sugar, raisins and nutmeg. It is absolutely amazing with a bit extra milk or cream poured over the top. I prefer it to rice pudding. My granny made this when my mum was a child and mum made it for us. Sadly my kids didn’t like it, so more for me lol. You should try it Rik, I bet you’d love it. Happy cooking xx

    I’ve recently bought some pearl barley. I wanted to return to a childhood staple. My mother 0:01 always used pearl barley in nearly everything, but especially the local dish from Stoke-on-Trent called Lobby. Pearl barley was used to bulk out food for those on a limited budget. I can still smell the dish - memories of coming home from school on a winter’s day to the smell of Lobby, eaten with plain bread to dunk in. Yummee.

    Clever combination ,most try it ! . I do use barley in my kitchen as a side dish with veggies , in my favorite soup "Bean and barley" (with dry mushrooms )etc. Our mothers did a good job teaching us about its health value - Super Food , and is not expensive .     No, I hadn't heard of this but it does look really good. I do have barley in soups and stews but never this way before. It's a wonderful way to stretch meat content as well as add nutrients in these times of hardship for so many. I shall give it a try. Thank you!

    Barley is wonderful but hard to get where I live. It is actually grown around here, but processed barley is hard to get. Anyway, I found some in a local store and bought multiple packages which I stored in my pantry. And mice, quietly and effectively nibbled tiny holes in the bags and packed off every single grain, leaving only empty bags.

    Even though I feel guilty cooking barley, instead of fermenting or distilling it, I eat it often...it's delicious :). There are hundreds of recipes for it. It is one of the originals and one of the best, they ate this in the Stone Age. This recipe looks simple, and it is, but guaranteed, it is hearty and absolutely delicious.     This is most similar to the American recipe for Southern Style Meatloaf, tho obviously baked, not fried, and with bread crumbs instead of the barley, but the brown gravy, which I found odd when I moved down here, is their normal (not sure about the onions in it). Up North, we use tomato ketchup or paste in and on top to bake it, often using Italian Seasoning, rather than plain thyme and sage. I have never seen anyone use mustard with any sort of this as a meatloaf, not even as leftover meatloaf sandwich. They just add more ketchup, usually.
    Other variations this reminds me of: My dad's teriyaki burgers, where he used white rice, not barley, and soy sauce, not worchestershire, and just salt and pepper, then grilled the patties over charcoal. Bar-b-cue sauce would have been gilding a lily, but we did use ketchup and mustard, sometimes Miracle Whip (a kind of mayo with a touch of mustard an sugar), while down South, it is always plain mayonnaise. My Vegan version (done with both Impossible and Beyond brands) came out okay, in spite of being merely pan fried once, and air fryer fried a couple times. I miss the charcoal flavour, which I am sure is horrible for my health! I have some Vegan worchestershire, so I will switch things up next time and try it your way. My husband hates rice, and often refuses anything with it in it unless well disguised, so I usually don't put it in. I've added minced mushrooms before, as well as one banana peel, finely minced, as an extender. I once did a lentil dish with rice, and he couldn't tell it, because it was brown, and his eye are going.
    Oh, btw, I have some ancestors from up your way; maybe we're distant cousins. I loved "Last of the Summerwine." I can mimic the accent when I hear it for a bit. Cheers!

    Pearled barley is the more common form of barley that you will find in stores. This has had the bran removed. A less common form is hulled barley which retains the bran. I use both forms.

    I think I would do the potatoes in the ring and then serve the beef over that and the top it all off with the gravy and then brighten it up with peas and carrots. I think I'm going to make this for dinner tonight.

    Afternoon Rik,minced beef a great base ingredient. I feel ashamed, that I've not used barley for over 20yrs 😢More fool me. Apart from the benefits, health wise, it means you can cut back on the beef( expensive item) win,win😊You could follow the modern( ish) trend and name the dish: A deconstructed cottage pie 😂 extra ££££ on the menu 😂wish I was joking 😊 Cheers, a new meal for the family sometime this week 😊❤Allan&Family

      Allan, thank you. Its an amazing ingredient we all over look. I'm lucky to be honest I have 5 one kilo bags here. I use it in soups and meat stews, which are a little thinner on the soup. I.e. more watery. Mixing with meat dishes like shepherds pies etc. and even in mince pasties is a winner. Hope you give it a go. Thank you. Best, Rik

    One of my most favourite items to add to stews and soups. Like mom use to say, it will stick to you for the day! Sort of like your porridge in the morning!
