Thank you for showing me something else that I can bake in my Air-fryer oven unit. And I am very fond of lemon used as a major flavouring. In Canada we can purchase Golden coloured cooking lard for baking which I often do especially when it comes on discount price. I freeze a few pounds when available to stretch my pensioner's baking budget.

I've made these twice now. First time I used soda bread flower which is a type of self raising flour and it turned out very good, but not very lemony as I used an old lemon. Second time, I made a mistake and creamed the sugar and butter together before adding the flour, so it was a pastry base not the biscuity base it's meant to be, it still turned out very good, the base just needed a little more baking time. A fresh lemon was used and the zest, and it was really very good. I'll try again with everything done right, but I think I'll go back to the soda flour for the base. Excellent videos Rik, and I'm really glad to follow your pastry recipe as cold ingredients aren't a part of the method and the pastry s more robust to handle Han the chef cold pastry. A quick video on your pastry would be really handy, your long one is good for explaining the why about the ingredients, but a short one to refresh the memory instead of jumping though the big one. I have to police my family with this or they'd eat about 5 slices each and leave none for the rest of us.

Unfortunately, I couldn't bake it in my air fryer as I have a Ninja Foodi, and it's not practical. So, instead, I baked it in a conventional gas oven, and oh my days, was it delicious! Two hours after cutting, there was just one solitary piece left. The kids and the adults absolutely demolished it. This is a real winner.
If I had enough spare counter space in my kitchen, I would most definitely invest in the HYsapienta Airfryer oven. I could not believe how cheap they were to buy here in the UK.

I don't have air fryer oven either. Not many kitchen aids I can afford, that's why I love these simple to cook recipes. My sister has an air fryer so I'll watch with interest. Our butter etc also quite expensive 💜
Rick I really love how you are so gentle with things you don't bang or clang around. I lived with someone who thought that banging and slamming things in the kitchen meant that production was going on but it was the most uncomfortable, untasty, unhealthy, unattractive food that person made and a huge mess, that I had to clean up sometimes it took me two or three days to clean the kitchen after that person so-called cooked. You cook with such love and care! Like you said therapeutic, I appreciate your style and your wonderful simple recipes! And I love how you measure with your heart!

@@Bonzi2 It’s the Lebanese version. A lot of cultures have their own variations on the same theme. A lot of European varieties use pork and or beef and cook them in a tomato soup. The recipe we use traditionally uses lamb and cooks in a garlic, mint and lemon broth. Most European rolls are larger than middle eastern ones which are more cigar-like but our recipe makes larger ones. Rik has the recipe which I changed so it’s not totally traditional and naturally he will put his own flare into whatever he makes. I’m looking forward to seeing what he does with it, my uncle did a couple of things that nobody else does. They’re delicious.

In this delicious episode, after Rik divies up his Luscious Soft Lemon Bars, there is a sudden strange noise outside his kitchen window, causing him to become temporarily distracted and turn his back on his Lemon Bars while he investigates. At that moment, a collective loud stomach churning and rumbling is heard from the chronically drooling UA-cam Audience crowded in his kitchen.
Upon returning to the counter, Rik finds all traces of the Lemon Bars gone and the Audience is innocently staring back but discreetly smacking their lips!
Rik genteely inquires about the whereabouts of the Lemon Bars hoping for the best but expecting the worst.
The Rascally UA-cam Audience in unison denies ever seeing him bake them or that they ever existed, but plead for him to get on and bake them, for pity's sake!

40° where you are, eh Rik? It’s also hot here in Thailand….and butter is expensive as well, especially Lurpak, so I only be baking minimally in me little air frier. I’ve only just found your videos on UA-cam and enjoyed what I’ve seen so far. Noticed one on fish n chips which I’ll be looking at next, but not sure where I’ll get haddock or cod and mushy peas from in my neck of the woods…🤔
Its only 36 in Chiangmai now cooled for rainy season. Makro sell frozen cod - not big fillets - get the Sea Perch/Barramundi let they clean it perfect for a white fish substitute I use it every week. Mushy peas unless you make your own - you can buy from Lazada. Thank you. Best, Rik

I’ve just bought a HYSa air fryer. Going to try that one tomorrow. We’re gluten free, so I will use GF flour & cornflour instead of wheat.

@@BackyardChef they worked out really well. I made a gluten free shortbread base, which I baked for 15 mins in the HYSA whilst I made the lemon topping. I mixed sugar + cornflour together, added lemon juice, water & some lemon essence, & then cooked it in a pan. I turned off the heat & beat in 2 eggs which cooked in the hot sauce. I then spread it over the top of the base & left it to cool. It’s delicious. 😁

Here in Australia 🇦🇺 our gas bills are through the roof. Is that a convection oven or a toaster oven? I'm on the lookout for cheaper alternatives. I live in Public Housing and cannot switch out appliances, plus on aged pension so out if budget as well 😅❤

b cool! Tasted the raw mixture and added a little more sugar, i cut sugar down, then decided it needed more! When i taste one, i will put in fridge to eat cold! One question could you put meringue on top after you've finished cooking and popped back in the oven or would that overcook the curd!❤❤ Just tasted a piece still hot, but shortbread a little soft, i should have done your trick and sealed the shortbread with egg wash before adding topping otherwise tastes great now in fridge!

I missed what the oven temp would be for this. I don't have that air fryer oven, but I do have a Cosori air fryer. The basket isn't nearly big enough to make these and cut into bars.
Yes - I would have cooked at 160 typically - however, I tried this air fryer bake setting, which is 140 C. Best, Rik

That’s because it’s an air fryer which is like a miniature fan forced oven on steroids. The effective thermal pressure is far greater than a normal oven so you need to reduce the temperature to compensate. 👍

What a privileged person to be able to say this. In my country butter is only for the wealthy. I can only use little bits so count yourself lucky and have some humanity and pity for those that cannot enjoy the life you have
Most people can't tell the difference between butter and butter flavored margarine..in fact I would safely bet no one even you could tell the difference in baking
I do. Marg, especially the buttery flavoured, most certainly is used in good restaurants. Obviously you can’t tell the difference which is exactly the point.
Good old Stork spreadable is great for cakes and biscuits, I only use all butter for scones
