* Ingredients
1. Dough
350g (2.4 cups) All purpose flour
25g (2 tbsp) Sugar
210g (0.87 cup) Lukewarm Milk
4g (1/2 tbsp) Instant yeast
15g (1 tbsp) Cooking oil
2. Custard filling
3 Egg Yolk
60g (0.3 cup) Sugar
20g (2.5 tbsp) Cornstarch
20g (2.5 tbsp) Cake flour
200g (0.83 cup) Milk
45g (3 tbsp) Unsalted butter
Steam for 10 minutes, turn off the heat and simmer for 5 minutes
* Important tips
1. Heat on medium-low heat, if the filling is a little dry, the buns will be more shaped. If the filling is soft, the buns will easily collapse.
2. The recipe I gave can make 14 buns, each small dough weighs 41 grams, and the filling weighs 25 grams each.
3. Only need to ferment once, it takes about 1 hour. Depending on the room temperature, Please check the state of the dough.
4. Steam for 10 minutes after the water is boiling, then turn off the heat and simmer for 5 minutes before removing the lid.

This is So creative. My oven has broken so thought to finally have a go try making one of these steamed cupcakes. I tried it before creating what would work like a steamer putting the batter in a ceramic cup and though it took a long time it did come out fine but these look different and I have a better steaming idea this time. Where there’s a will, there’s a way! 🙌🏻 I’m going to be using a deep pot with a lid.. pour some water in it, heat it then place a stainless steel cup I have to support a wide sieve on which the bun will be resting. 🤗 But I’m afraid the cup won’t sit still. 😬
😒 Living on a budget is hard enough.. 😩 why the oven had to fail on me now??

If you use fermented egg yolks instead of plain ones they become more salty.
@@supersaiyangplays7842 I never fermented egg yolks, I don't know how to do that, and frankly, I would be afraid to do it. I cought the salmonella once because of bad eggs, my son, a baby at the time almost died and it ruined his life.
Not only I don't play with eggs but I am double cautious with them.
Unless you demonstrate ma a way to do that without any risk for the health, I discourage anyone to play with that.
And I am not the only one to make it, the professional rules to use uncooked eggs are very strict.
For instance you are not allowed to make a mayonnaise with eggs without storing ITIN the cold, and you must discard it if it's older than 12 hours.
This explains why homemade mayonnaise almost disappeared from lol the restaurants to be replaced by substitutes without eggs.
@Marc Hervais you can buy them at a chinese store usually and they're perfectly fine to eat. You could also add some salt to the dough, but that would end up making the sweetness more prominent. They use that method with pastries too. I totally get your caution when handling eggs, getting sick off of one really can mess someone up. I hope your son is doing well.

I am just wondering why the moisture during steaming didn't drop unto the buns thus result to soggy wet doughs? I have learned during steaming the lead must be wrapped with a cloth to absorb the moisture during steam.
What is different all purpose flour and cake flour? Can I use both plain flour? Thank you

I just made these for the first time. I got a 2 tiered bamboo steamer as a gift since I have been making bbq pork buns regularly and wanted test it out using this recipe. It worked great. My dough came out a little bit dry, maybe I kneaded a little bit too long, otherwise they are perfect. Your video and instructions were easy to follow along. I did a bit extra and decorated my buns with ears, noses, and eyes to look like little bears. 🐻

Finally made these and they're great! My husband even likes them and he's not a custard fan. I did mix 1/2 tsp of Fiori di Sicilia flavoring into the custard after turning off the heat and it worked great. Also I don't keep cake flour, so I used 25g cornstarch and 15g AP flour, and while the texture was not quite like the video it did set up and steam fine. It's just a bit sticky and won't roll out. Hope this helps some people and thank you again for this recipe!

This video was so relaxing and I am super excited to try and make them! Being from California originally I go to have dim sum alot! I have grown to love it. Now that I live in Georgia it's harder to find authentic and traditional dim sum.
This is the reason why I’ll stay in California. Just in case I need my dim sum 😅

In July I had a vacation to Thailand, in the hotel where we stayed in they had steamed custard buns. I liked them very much, those were soo delicious, and when I came back home I decided to try to make them myself! They turned out really great, it’s probably one of my favorite food now. I’ll transfer this recipe to my cooking book later :)

Ok. I need help. I'm confused when she say turn off the heat. Then simmer for 5min. Do i just turn it lower to simmer? Or turn off completely and then leave it covered for 5? Cause simmer to me means the stove is still on but low.
