  • A cold winter has come in Korea. So I want to eat warm steamed bread.
    It's easy to make and tastes very good. Let's make it together~
    [8 pieces]
    ✤ Custard (measured with rice spoon)
    -200ml milk
    -20 g butter
    -30 g sugar
    -20g starch powder (flour is also possible, but it needs to be boiled longer)
    -2 yolks, 32g (replaceable with 100g boiled sweet potatoes)
    -3~4 drops of vanilla essence (can be omitted)
    ✤ Dough (measure with rice spoon)
    -260 g of all-purpose flour
    -26 g sugar
    -4g salt
    -160ml of warm milk
    -3g yeast
    -4g baking powder
    -10g cooking oil
    ✤ Decoration
    -Chocolate pen
    -Paper foil
    ✤ TIP
    -When making a shape with chocolate, cool the bread before drawing.
    -You can also bake it in the oven. (180/20 minutes)
    -When baking in the oven, it takes two fermentation processes to double it.
    -When baking in the oven, apply eggs on the bread before baking.

    This worked sooo well for me, the buns were fluffy and full of flavor and the custard was creamy and not too sweet. I baked 4 and steamed 4 and I have to say I prefer the steamed ones, although the baked ones were still incredibly delicious.
    I didn't have a steamer on hand so I looked up substitutes and ended up using balls of tin foil and a plate to steam them and I can safely say that it works. Either way, I'm going to the supermarket as soon as possible to buy a proper steamer for when I next make these.

      Instead of a steamer, you can get your biggest cooking bowl and put a small bowl inside it. Pour water into the bowl about 3/4 ish and pour water around the inner bowl as well. Place a plate on top and put the buns inside it over parchment paper. Hope this helps, I saw it in a different video, but I think it would work!

    heres the full recipe written out!
    custard buns
    ingredients:
    custard
    - 2 egg yolks (can substitute with 100g boiled + mashed sweet potato)
    - 30g sugar (1/4c)
    - 20g butter
    - 200g milk
    - 20g starch powder (2tbsp) {any starch: potato, corn, etc}
    - 3-4 drops vanilla essence/extract
    bun skin
    - 260g all purpose flour
    - 26g sugar
    - 4g salt
    - 4g baking powder
    - 3g yeast
    - 160g warm milk
    - 10g cooking oil
    + chocolate pen for decoration!
    instructions:
    making custard!
    add your 2 egg yolks or sweet potato into a medium sized bowl and mix with 30g of sugar until combined. next, put a saucepan on low heat and add in your 20g butter and 200g milk. stir until the butter has melted. pour the milk mixture into the sugar and egg yolks and stir well. add in 20g of starch powder and mix well. pour the mixture back into the pot and add in 3-4 drops of vanilla essence. boil the mixture over low heat until it thickens to a thick pudding texture, constantly stirring to ensure the mixture doesn’t burn. pour the mixture into an airtight container and put the mixture into the freezer for 20 minutes. take the mixture out and divide it into 8 equal parts. roll each part into a ball using your hands. put your balls of custard into the container again and freeze for at least 3 hours.
    making the bun skin!
    mix 260g all purpose flour, 26g sugar, and 4g salt together in a large bowl. add 4g baking powder and 3g of yeast. then, add in 160g of warm milk and mix well. use your hands to knead the dough well together.
    flatten your dough slightly onto an unfloured work surface and add in 10g cooking oil to make the dough smooth. knead the oil in for 3-5 minutes. once the dough is smooth and springy, divide it into 8 equal parts. each ball of dough should be 56-57g. cover the dough balls with plastic wrap to keep them from drying out as you roll each piece of dough into a smooth ball. rest under plastic wrap for 5 minutes.
    using a bowl, trace the top edge of a bowl onto 8 pieces of parchment paper, and cut those pieces out.
    take a ball of dough, and flatten it with your palm until it is about 10cm in diameter. take a ball of frozen custard and put it in the center of your flattened dough circle. wrap the custard with the dough, and pinch to close the bun. make sure the bun is round. put the bun onto one of the pieces of parchment paper. you can use a bit of extra dough to make the ears and the nose of the bear.
    cooking the buns!
    put the buns in a hot steamer but with water that is not too hot to touch (warm water.) wait for 30 minutes. steam the buns for 12 minutes in boiling water (medium-high heat.) after twelve minutes, turn off the heat but do not open the lid for 5 minutes. use a chocolate pen to draw the eyes and nose of the bear.
    and youre done! enjoy your custard buns ^^

    I tried this today and they turned out pretty well! Mine looks a lot uglier than the ones in the video, but I tried 😅
    They were easy to make and it was fun! It only took me roughly 2 hours to make them because I didn't feel patient enough to wait 3 hours for the custard to freeze. They tasted good, but the bread was a little more salty than I expected it to be.
    I'm an awful cook and an even worse baker, but these turned out great and most ingredients are stuff you can already find at home.

      Well, you gave it a go and probably improved your baking skills along the way. Good for you! Who cares if they're a little weird looking xD
      I tried them too but I did wait as the instructions directed. I made the custard balls the night before to let them freeze over and made the rest in 2 hours, like you said, the next day. Although the bears didn't look as cute as the ones in the video either, they were still delicious. I coated the frozen custard balls in a layer of chocolate too for extra flavor.

      @Melon Melon Well, you can substitute it for banana, puree it and then add sprite (trust me) right when you bite into it, it’ll be so soft it’ll fizz in your mouth and totally not explode in your stomach thus causing stomach damage ! 🥰

    I made these tonight and even though I adjusted the recipe, it still worked really well! I didn't use any baking powder or vanilla essence and I also didn't wait for the egg custard to freeze (just firm in the fridge enough to hold it's shape). The buns still came out fluffy and delicious :)

    These were really, really good! I was shocked at how easy it was to make custard... I am NEVER buying custard mix again!
    Since I'm a terrible decorator and my teddy bears looked like monster hybrids, I gave up and spread chocolate all over the top. The buns got 10 times tastier!! I loveeed the custard/chocolate mix, and so did my family!❤️
    PS: I had to go out so instead of doing the hot water thing, I left the bun-shaped dough out for 3 hours and it had the same effect as steaming it with warm water for 30 minutes

    이거 해먹어봤는데 정말 맛있어요. 진짜 사먹는 호빵 딱 그 맛인데 더 쫄깃쫄깃하고 맛있어요. 해외에서 살다 보니까 호빵 먹기가 힘들어서 호빵 좋아하는 남편한테 해줬더니 정말 좋아하더라구요. 저는 호빵을 안 좋아하는데 맛있어서 세 개나 먹었습니다. 재료가 간단하고 만들기가 쉬워서 베이킹을 정말 못 하는 제가 해도 영상이랑 똑같이 나왔어요. 레시피 대로 하면 크림은 달지 않고 부드럽고 괜찮더라구요. 제가 만들고도 신기해서 내일 한 번 더 만들어 먹으려고 합니다. 앞으로 자주 해먹을게요. 좋은 레시피 알려주셔서 감사합니다 :-)

    Tried this recipe as a beginner. It's simple and amazing.

      To be fair, I also tried to do 3-4 drops and the bottle of vanilla would let me do a drop at a time, so it was more like a splash of vanilla.

    AMIGOS, LOS HICE POR PRIMERA VEZ EN MI VIDA VIENDO QUE TENÍA TODOS LOS INGREDIENTES EN MI CASA (la levadura la sustituí por polvo para hornear, la misma cantidad de ambas levaduras, es decir 7g) Y JALAROOOON. Me salieron tan decentes y bonitos que por primera vez toda mi familia estuvo de acuerdo en que quedaron ricos. Se llevan súper poquito tiempo de cocción (me preocupaba por el gas en casa XD), y el relleno siempre puede ser sustituible por chocolate, frijol dulce, nata, incluso se pueden hacer salados omitiendo el azucar en la masa. Amé mucho la receta y el video tan bonito y bien explicado. Es útil si apenas tienes conocimientos básicos de cocina, o eres estúpido como yo.

      @@katze7074 Precisamente. UuUr El polvo de almidón puede provenir de cualquier otro alimento que contenga almidón, me imagino, mientras que la Maicena es alimdón de maíz. Pero es lo mismo. xd

    Hi! thanks for the recipie, i love it! I have a doubt about the "starch" you use to make the custard filling because i followed the instruction on the video and the result was a very creamy though liquid custard and couldn't make the balls even after putting it in the fridge. Thanks you so much!

    Got the custard cooling in the freezer... going to make balls . Then might make the buns today, might tomorrow.
    While waiting I beat the egg whites and added a little salt and sugar and made meringue. It's happy in the fan oven. 100°c for at least 90 minutes.

    커스타드맛 잉어빵도 좋아하고 커스타드맛 깨찰빵도 좋아하는데 커스타드맛 호빵이라니 너무 맛있을 것 같아요 근데 맛도 맛이지만 모양이 너무 귀여워요 아까워서 먹지도 못할 것처럼 생겼네요 만드시는 모습을 보니 제가 다 입이 귀에 걸리네요 호빵들이 너무 귀여워요 !

    This turned out great, I made them today. The buns could have been smoother, but it is my first time. Thank you. I wasn’t sure if my yeast worked so I rested the dough for an hour or two, and the dough was still fluffy.

      Rested them for a couple hours?? Hence why your dough was an odd texture. This person is an EXPERT. Just follow the instructions and you'll get great results.

    (notes to myself)
    - rest the buns in the steamer for 20 mins with warm water in the steamer (hot but not too hot that it burns your finger)

      Yes, opening that pot while they are supposed to be resting is really not good for the product Leave it alone. It needs the slightly warm environment and repeatedly (or at all) opening the lid messes everything up.

      @@may-zz1uo Opening a steamer lets the steam escape. So leave the steamer alone to let it do its work. (When the buns are resting before cooking, they are just being incubated, basically, or warmed. When they are being cooked, the lid prevents the steam from escaping. In both cases, opening the lid to "check" on them is doing a disservice to the buns.)

    I just ate one from the first batch and they are delicious! I made the custard last night which was nice because I didn't have to do all that today as well. The ears did slide off of my buns while steaming, so now it's not much of a teddy bun anymore, but it still tastes amazing! I would definitely reccomend anyone who watches to try and make these.
