For me I keep it raw and yes with the breakfast. The first part, so the good bacteria can spread ... and I love it with eggs too.

Yes! Cooking kimchi adds a whole new dimension to its flavor. And homemade sourdough is quite the process but such a rewarding venture!
Cooking Kimchi changes the flavor which some may like but cooking kimchi kills the gut healthy probiotic that comes from fermentation. Make more sense to just cooked raw cabbage instead.
