Searing the meat first would add so much flavor and cooking it at least 6 hours would make it so much more tender. I could never do the jalapeño peppers. Out stomach’s could never handle it, but if yours can go for it.

No tender loin in the crock pot is pretty good I put potatoes,onions,green bell peppers and two bouillon cubes and black pepper and let it go for 6 hours and stir it every two hours ..
This is the way you make it for tacos like the restaurants but you don't have to use those peppers 🌶️ just take the seeds out of your jalapenos for the flavor .. but the combination of all this is how you prepare your meat for tacos and enchiladas ..

Beef roasts are too expensive to screw up like this! Ground meat would work better! I started squinting with the Taco seasoning then she destroyed what was left when she used canned enchilada sauce! Taco seasoning is simply Cumino, Garlic, Mexican oregano, salt and black pepper.
No sear on the meat which is like crucial now, the meat wasn’t salted previously cause it looks moist, those veggies will be mush by the time it takes to get that meat to it’s nice softened state (add them 30-40 min before finishing the meal…40-50 for potatoes and roots). There is a lot to unpack here.
I do an easy beef Stroganoff in crock pot. 3 cans of your fav brown gravy, one sliced onion, and 8 oz of sour cream. I promise you not one drop of gravy will be left. An easy dish for working moms with a delicious gravy with fall apart roast.

It produces a chemical reaction called the Maillard reaction which changes the chemical bonds in the amino acids in the meat. Gives a lovely browed crust and a decidedly improved taste. Unless, of course, you like grey meat.
I would have liked to see this plated. Do you slice it? Is it tender? Does it fall apart? Do you thicken the sauce after taking the meat out? It would have been nice to see a finished video.
Personally, I wouldn’t waste such good cut of beef in any crockpot recipe. A chuck or arm roast would be perfect & much less expensive! And I’d definitely brown the roast before putting it in the crockpot.
Everyone has something negative to say. I'm going to try it with a few minor changes. Using a chuck or bottom roast and low sodium beef broth. Then I'll decide how it taste.

You must sear the meat well with a lot of seasoning on it.
I'd use stew steak, add some red wine and leave it for an extra hour or so. That's what slow cookers are for.

Always add some molasses which is also found in basting sauces, it thickens and darkens the meat with a nice sweet sticky taste.
