Beech and Pioppino are two different species. Pioppino, or Black Poplar, derives its name from and grows on poplar trees. Beech grows on.. beech. Binomen for Pioppino is Agrocybe aegerita or Cyclocybe aegerita
Chiodini and pioppini are not the same as the beech mushroom. Chiodini is the Italian name to honey fungus (Armillaria mellea/Armillaria spp.). Pioppini is the Italian to the poplar fielcap (Cyclocybe cylindracea/aegerita, ex- Agrocybe cylindracea/aegerita). The name shimeji (this is the correct spelling, not shimieji) is applied to a group of different species of mushrooms. The beech mushroom is one of the many shimeji, and it's specific name is buna-shimeji, or bunapi-shimeji in the case the white cultivated form. When writing the scientific binomial the epithet (second word) should not be capitalized, i.e. it should be "tessulatus" and not "Tessulatus".
Not really. All fungi have cell walls made of chitin and you need to process them to get to the nutrients inside. Heat breaks down the chitin, so the advice is to cook all mushrooms. As for bad stuff, some mushrooms have toxins in them when raw, like shiitake and button mushrooms/portobellos. You cook those for the nutrients as well as to remove the toxins
