Pork skin when I can’t find it I use Two Pork hocks to give the flavor of the skin . Gina being Sicilian I make it different like my mother made it 74 years ago. She would make a meatball mixture exactly when u make meatballs and flatten the meat and roll it up. i make it your way and my mothers way

I had the general idea, but was so glad I found you. She is making them for the pasta course for Thanksgiving, and I’ll be making them as soon as I can get my hands on pork skins. She, was an amazing cook, even her daughters in law would say “ she could put dirt in a pot, and it would taste good”. You and your cooking brings her back for me.
