I live in Montana and being originally from Arizona miss the great Mexican food we took for granted. Since living here I started a garden. I grow tomatoes, onions, garlic many different peppers, potatoes and lots of other veggies. I do a lot of canning! Have chickens too. I try to find easy recipes that I can use my veggies in. This year I grew poblanos and decided to try a recipe using them. I found this recipe. OMG. It is so tasty !!! The only thing I changed was I used beef chorizo instead of pork. So most everything was from my garden except the spices & flour. Next year I will be planting more poblanos so I can freeze them to use them for this recipe during the winter!! Thank you for this recipe!!

Tip for others concerned with the salt amount! I'm making this right now and I'm so frustrated over the "salt to taste" for the salsa. I have nothing to compare this to so how am I suppose to know what the right flavor is? Is it 1/4 t. or 2 t. salt? It's not like I can compare it to my mothers. So for me, I can tell you that 1 t. salt is a safe start but I ended up adding more. At least that's a starting point for you.
I just made it but my egg mixture turned out like a sponge cake 😭 I’m not sure what I did wrong, maybe not mix the eggs long enough or I waited too long to add the dry ingredients? It was delicious though

Because with the corn tortilla the sauce will become thicker , you use corn tortilla instead flour.
