    I tried her recipe. Just amazing! I let chorizo to sit overnight to drain but I decided to it sit a bit longer because it looked wet in the morning (~12 hrs). No acid reflux. My family enjoyed it. I super recommend it. Oh I don’t have a molcajete so I used my blender 100%, I had it on low on purée and let it run (3-5 minutes) it makes a difference. I did need to add a bit of water but I added it slowly with the tablespoon as suggested, 3-5 tablespoons. I bought my ground pork from Walmart because it was convenient. Highly recommended!!!       If you I didn’t have acid reflux then it’s most likely the Achiote/Annotto powder. I realized this a couple years ago after making Cochinita pibil. Looked it up and it’s been used for years for stomach ailments.

    Yum! American stores have the worst Chorizo around. You need to find a good Authentic Mexican Grocery Store, or make it homemade. This is definitely one of my new favorite "Go to" recipes! I love Chorizo con Huevos.....

    My wife and I watched ONE of your videos... the next day we bought a molcajete (the store only had the piggy one :D ), a bunch of dried chillis and achiote powder and now we have chorizo for dinner tonight! Can't wait! Love your videos, keep up the great work!

    I cannot wait to try this! I live in the eastern USA, but I spent four years living in Guanajuato, Mexico and have been missing Mexican chorizo ever since the day I left! There is just nothing to compare to the vibrant flavor and aroma of chorizo cooking! It is very hard for me to find anything authentic where I live, so this recipe is very appreciated. My experience there was so wonderful; the most amazing and welcoming people and the wonderful culture and cuisine. Muchisimas gracias!

    I really appreciate how clean your kitchen and the tools you use including your pots and pans. Sometimes you see people making food videos and their stove and the counters behind them look disgusting. You present your channel very well. Very clean.

    Growing up, Chorizo was a staple in our kitchen. We used it to flavor food, to scramble eggs in, or re-fry beans in, or potatoes, or nopales, etc. & of course, it was an ingredient in our tacos or burritos. But I've never seen anyone eat Chorizo as the main dish, or make just a "Chorizo Taco". De todos modos, siempre he comprado mi chorizo en el mercado, pero definitivamente probaré esta receta, se ve deliciosa. ¡Gracias por el video! Y saludos desde Los Angeles, CA.

    I made this and I gotta tell you it was so dang good. I've never had real chorizo before, just that BS they sell at the grocery stores. All of the Villa Cocina recipes are easy to follow. Keep up the good work!

    I just finished my Chorizo and I did exactly what you said to do. I used beef, though. It was amazing. My wife loved it too. I had my first sample with eggs. Later I will have it the way you did on the video. I just have to learn how to make corn tortillas. Thank you for your sharing with all of us out here. You two are great. Later I will try the Pambazo Mexicano.

    I tried your recipe for chorizo. OMG!!!! I thought I had died and gone to heaven. It was exquisitely delicious, THE BEST!!! After cooking it, I saw that the pan still had delicious flavors and decided to melt some jack cheese in the pan and immediately gobbled up with delicious chorizo flavors.     OMG...Rosana. I love watching your videos. I may never cook anything like this as good as you but you have a way of making food look amazing. Btw, your on camera appearance and your teaching is flowing better than before. I remember you never smiled in your earlier thumbnails but I'm glad that whatever was keeping you a bit timid in front of the camera became the success you are today.     This is awesome. Fresh/frozen chorizo at my local co-op is $10 a pound. Ground pork is only $4 per pound. I need to get on the homemade chorizo train!I love the idea of being able to make smaller portions that I can freeze.

    Made chorizo using this recipe recently. Only thing I added was about a shot glass full of mezcal for a 10 pound batch. Absolutely the best chorizo I’ve ever tasted.

    When I roast peppers I usually coat them with oil first. That tends to roast them faster and more evenly.
    Please make a video on how to make pickled jalapeños. Love the crispy ones.

    We would always make chorizo burritoes with egg when we would go on vacation. We would eat them on the way. That was when our kids were growing up. So many good memories.

    I just got back from Guadalajara last night and I’m missing my chorizo con papas tacos already. So of course had to figure out how to make it at home myself (I typically don’t like chorizo in the US but chorizo in Mexico in the bomb 💣 ). Thank you making this video.     I made. Some chorizo using your recipe and method. Outstanding. I made chorizo tacos for supper tonight. And they were so delicious. The only thing I regret is I only made 1lb.
    I think the only thing I would change is I would get a fattier cut of meat and grind it myself.. The ground pork i bought was a little lean.
    I would say that this is a blue ribbon recipe. I'll write this one out and keep it handy. Thank you very much for this recipe.

    I’m going to have to try your chorizo recipe. I’m a chorizo lover but it’s hard to find a decent chorizo from the grocery stores. Even chorizo from butchers in the Mexican markets doesn’t seem to be that great. I’m always looking for the perfect beef or pork chorizo. Love your video!

    I made chorizo for the first time yesterday when I made some charro beans. I saw your video today and it was very similar. I love your presentation style. I will be trying your recipe next as it looks so good! I didn't have achiote powder or pasilla peppers so, I used my just my guajillo & ancho peppers. Great video!

    Looks like a GREAT recipe. I like that you do not put them in any casing - just wrap and freeze. I have a food saver so they will last for many months and be fresh and the day they were made! !! !!!

    I love this. I grew up in Los Angeles and used to have chorizo a lot but in other parts of the country it’s very hard to find good chorizo most of it is really low quality meat with some of the spices in it and usually when you cook it it just turns to mush. I love the beef chorizo but I definitely like it better either way when you use better quality meat. I think a lot of the companies just grind up whatever’s left over and throw some spices in it so it’s usually pretty low quality when I buy it at grocery stores out here in Tennessee and Kentucky. Lol. That’s the thing I miss most about California is the Mexican food. I could always find a great restaurant with amazing food. It’s very hard to find any good Mexican food out here most of the restaurants are all the same and none of them are very good. Occasionally you’ll find a good one but in California they’re everywhere.
