    Akis my mum makes pita and I keep asking her to show me how to make the filo and she says 'oh no it's too hard' she's old now and she learnt in her village by my grandmother when she was young. I will do this recipe and show her I can do it 👍😁 (I'm from Australia but my parents are from Karditsa)

      @@mdina80 Very interesting history of the Mediterranian. You are talking about the Greek city States outside Greece/Hellas? So its only Sicilians and not the Italians right? They originate from the Italics right?
      I actually thought that the greeks were thrown out of the city states after Rome conquered them and populated them with their own people

    Kids in Greece used to fight about whose grandma made the best spanakopita back when I was a kid at least haha! Poor them..it was obviously my grandma 😄

    I tried this pie at the airport in Heraklion Greece; I loved it so I searched it, found some others but then I remembered! Akis!
    so I searched again and I found it..it looks beautiful. .easily recreatable..can't wait to give it a go..yet another lasting memory brought into the present.
    I love food and cooking nearly as much as you do Akis..

    This was delicious.....And for the dough 210ml water (from the recipe - not mentioned in the video)..
    Spinach is pretty expensive in Finland so I used a mixture of baby spinach, black beet (chard) and kale. Was extremely delicious, probably due to the herbs coming straight from our garden! thanks!

    The amount of times that I've heard "drizzle with olive oil" makes me start to think that as an Italian we might be beated by greeks in its use 😂😂😂

      @Dimitra Kupraiou Greek food is Amazing as well (There is a restaurant where I live that makes this veggie pasta with 7 different vegetables olive oil wine and fresh herbs) (i get no parmesan on it and a salad)

    i am definitely going to do phyllo dough but can I use flour instead of semolina because I'm not sure if here in California we have semolina

    ... as delicious as it looks ... the pastry just seems too thick ... and I've never heard of anyone using coriander in spanakopita ... it usually consists of spinach, parsley, mint and/or dill ...

    Damn this recipe is amazing. I made this several times with self made or ready filo. But it's about the filling. It tastes so good guys, really! even though I don't use dill. Everyone who tries this is amazed. Thx Akis for another great meal !

    We are serbian and my mom makes a similar version of this pie. A lot of serbian people make this type of pie. Obviously I believe it is inspired by the greeks. Serbians and greeks are orthodox brothers. Akis, thank you for the recipe.

      ... It originated from Turkish cuisine ... (like MOST foods people mistake as being greek). It was introduced to greeks during the Turkish occupation of greece. The original is called "ispanakli börek" ... which simply spinach stuffed in pastry.

      @@virtuallyme2518 What do you mean turkish? I have a ton of examples where non turkish people made recipes to please turkish local rulers around the ottoman empire...So what's turkish? Because even the local rulers where just Christians of byzantine culture that turned muslim.There is an account after the fall of constantinople where the Patriarch mentions that the Christians were converted to Islam with their own will(to get the privileges of the new ruler) in waves.Another account states that the anatolian turkish people were displeased with mehmet and his predecessor for the privileges they gave to local people of thrace macedonia Epirus and Thessaly for becoming muslims thus turkified...So let me ask you again, what is turkish other than a broken language that dates from some nomad conquerors without any national belief?

    I had this everyday for breakfast & snacks whenever I visit Greece & Turkey :) so yummy! In Rhodes, it was shaped into circular/spiral

    After one hour in 190C dough is still not baked inside altough golden on the outside. I suggest to bake bottom of the dough first and then add the rest and bake again as usually you would bake any quiche or tart.

      I baked this many times, no problem. The oven must preheat like he said at the beginning. My oven is old and still works. I used frozen phyllo sheets from the store and it saved so much time

      the first time I tried a pie with phyllo dough I fell in love so now I use it for pretty much everything. Empanadas? Cool. Sweet dessert I decided to experiment on? Why not. Savory pies charged with veggies? Awesome! It's so versatile I can't wait to make my own (:

    you need practicing in making the filo akis...my mom (and myself) would make at least 10 paper thin fyllos and layer the filling between them.she considered those just putting them in the middle amateurs...

    =} I like that he mentioned a vegan option, I've been veganizing his recipes for a couple of years now. There's vegan cream cheese, (pick the one you like) and if you soak firm tofu in apple cider vinegar over night then it tastes a little close to feta cheese (it'll never be exact, but it works) Thank you Akis keep em coming!!!!!!

    I finally made this, I used Kale instead of spinach because I have a lot of kale, yummy!
    can I prepare the phyllo dough, seal it in a bowl in the fridge over night and continue making the pie the next day? I think I will be exhausted after preparing the dough:) I am used to the store phyllo pastry, it's super thin, but it's not available year round.
    my favorite Greek & Turkish pie, follow by the sweet custard Bougatsa, I ate these everyday while I was there :) in Rhoda, the bakery shaped it like a spiral circle.

      Go ahead, the dough will rest in the fridge without any problem. Just don't put it in the deep freezer, that won't work (tried it several times myself)

      Το ανοιγμα φυλλου θελει πολυ εξασκηση και εμπειρια για μαθεις να το κανεις οσο λεπτο θες. Η γιαγια μου στο χωριο το κανε τελειο, αλλα εφτιαχε πιτες 50 χρονια και....
      Δεν χρειαζεσαι τοσο πολυ, αλλα ειναι κατι που βελτιωνεται με την εξασκηση.

      καλά σίγουρα γυναίκες που ανοίγουν συνέχεια φύλλο είναι πολύ πιό έμπειρες σε αυτό ξέρουν όλες τις τεχνικές..τώρα εμείς που είμαστε και πιό μικρές μαγείρισσες δεν είμαστε και τόσο εξοικειωμένες με αυτά αλλά δεν χάνουμε και τίποτα να δοκιμάσουμε! όλα θέμα εξάσκησης είναι!δεν την έχω επιχειρήσει ακόμη τη σπανακόπιτα βέβαια αλλά όταν τη φτιάξω θα έχω πλήρη άποψη!:)

    You forgot how much water we should add in the dough!!!! At least 200ml I reckon because 500g flour and 100ml olive oil + 20ml vinegar without water that's not gonna cut it lol

    I had to add water to the dough as it would not form into a ball too crumbly. I used Special White Flour that is for Bread, pizza etc, maybe that is why.
