This was my first time making Spanakopita. I was lucky to start with the best recipe. I made a couple with spinach from my garden and the second time used plain organic whole milk yogurt instead of ricotta. I like the slightly acid taste even better. The third time, yesterday, I used kale instead of spinach since it is what is currently growing in the garden, I love it equally... Thank you!

This is the best and easiest spinach pie recipe. I have made it quite a few times and my family requests this meal repeatedly. It is so favorable and tasty.
I made this today and the results were phenomenal. Don't skip the lighty crumpled fillo on the top -- it's visually beautiful when it comes out of the oven and adds a nice crunchy texture. The herb and cheese mixture is perfect. I also love how this is made in a 1/2 sheet pan, which is perfectly sized for fillo sheets, and leaves you with enough entree-sized servings to feed a crowd. My only recommendation if you make this recipe is to not change a thing. Follow the instructions exactly, and you will be delighted with the results!
My mum has moved interstate and her spinach pie is the best, now we are in state lockdown I haven't seen her all year, and I miss her and her cooking, I have now made this recipe so many time now, my mum is so jealous as she never did this with the pastry and I send her videos of me cutting into mine and she is so impressed lol I love love this recipe! I have only made spanakopita once before and felt intimidated that my first attempt was soggy and heavy, but after seeing Dimitra's video, I made it for Sunday dinner tonight (along with maroulosalata). I hadn't heard the term "half sheet baking tray" before, so I googled and found that none of my baking pans were the correct dimensions. So my sweet husband was so excited about me making this recipe, he ran to Target today to get me a half sheet baking tray, LOL! This recipe and Dimitra's method is truly fantastic and uncomplicated...it produced the most light, flavourful, fresh and wonderful spanokopita we've ever had! The phyllo dough is wonderfully crispy and there is no "sogginess" that some spanokopitas have! This recipe is a keeper. Thank you, Dimitra, for your wonderful videos. Your friendly personality and clear and concise videos are a joy to watch. I'm Armenian, but a huge fan of Greek cuisine, and your recipe for spanokopita is one I will make again and again.
After searching the web for the best spanakopita recipe, I came across your video and must say that it was a huge hit. So simple to make. This has been my "go to" video for over a year now. I've bookmarked it and saved it to my Playlist. It's such a simple and basic recipe and as for the taste, I'll stack it up against any I've had and that includes the restaurants in Tarpon Springs, Florida and Detroit, Mi, two cities with huge Greek influences. I love Spanakopita so much that every time I had it I'd think, "I have to learn to make it" but thought it would be to complicated. That is until I got serious and searched UA-cam for a good video. Thank you for posting this Dimitra. I'm making it again today for dinner and I swear I've made it so much, a bit of a Greek DNA is infiltrating my Polish heritage. :-D

Made this today and it was absolutely delicious. I see alot of people in the comments complaining about the ricotta cheese. I don't know why. The texture was fine and all I tasted was the spinach and the feta. I thought it was a great recipe.
Look no further...this is the BEST recipe on line! The flavor is so rich and the topping trick with crumpled phyllo dough sheets makes it beyound perfect. I have tried this recipe with lots of fresh dill, Spanish Carbonelle olive oil, frozen spinach and even red onions. It always comes out amazing. Love you Dimitra!

This is the best method I've ever seen for spanikopita. This dish is my daughter's favorite meal since she was little and I still make it for her birthday. This is ABSOLUTELY the BEST spinach pie I've ever had. I have made numerous recipes and even though the ingredients are usually very similar between recipes, this one is PHENOMENAL! I made it exactly as stated but my pan was slightly smaller but not a problem. It crisps up nice in the toaster oven for leftovers. I will use more layers for the bottom layer next time. And there will be MANY more "next times"! I think the fresh spinach is what puts this over the top! Make it, you won't be sorry!

I just made this for the first time and it came out really well! Wonderful recipe. I didn't have the 1/2 sheet baking tray, so I used a big 14" castiron pan and it came out just as crispy and delicious.

I made this but vegan. It was amazing. I used a mixture of soft and hard tofu, crumbled (2 cups), 2-3 cups Daiya cheese, 2 cups ground celery, 1 cup ground green peppers, 1tb black pepper, a pinch or 2 of cayenne, 2-3 tb soy sauce , one cup finely blended chickpeas, 4-5 lbs fresh chopped baby spinach. I did same way she did the filo and xvirgin oil but I used 10 layers at the bottom. Bake at 350 for an hr. or less.

Unbelievable! I’d never made such a thing. I followed Dimitra’s video directions exactly and ended up with the most beautiful and delicious spanakopita. It was golden, juicy, and perfectly made. My guests were stunned. Any reservations I might have had about working with phyllo were all allayed by the result! When I pulled it out off the oven and set it out on the counter, it was met with oohs and aahs. And I made it! Thanks, Dimitra.

My YiaYia always had this made already so I have been trying to figure out her recipe for months. THIS is the closest I found, and WONDERFUL!!! My YiaYia passed away years ago (I am 53), but I just smile thinking about her while I am making and eating spanikopita. :):):) Thank you for your hints, like cutting it ahead of time! Now I know why mine was always making such a big mess. I am now teaching my own children how to make it like this; it is a clessic in our family.
I made this today for lunch in my restaurant, it was delicious and all who had it raved about the flavor I used fresh dill and added a few extra scallions the flavor was so fresh. The phyllo i used however did not have as many layers/sheets as yours did but i made it work I only had 2 sheets left to ruffle on the top, but it still came out beautiful
Absolutely delicious! I made it for a dinner party of eight this week, served it with fresh heirloom tomatoes and stuffed grape leaves. It was so good, I am making it for a smaller dinner get together tonight. Oh, and I tweaked it using a recipe from a Greek friend of mine by adding 8 oz of parmesan and using only 8 oz of feta. Superb!

My daughters worked at a greek restaurant throughout high school and he turned us on to it..he has since moved away and I've tried to make it the way he did but can't seen to find the right recipe..He had a sauce on top and layers I have used zuchinni instead of eggplant in season and my layers were more a mushroom cherry tomatoes sauce was so good....thank you
Made this with your Saganaki recipe. Wow this is so easy and not pre-cooking the spinach makes a big difference. Do not skip the instructions to add phyllo on top. It really does make it fluffy. We reheated the next day and it was just as crunchy. My mom did not want to share the leftover for other family members because she loved it so much. Thanks for sharing the recipe. My dad is diabetic and he ate this dinner and his sugar count the next morning was right on.

Oh wow! I tried this recipe tonight and it was delicious! I had another recipe which cooked the spinach until I found yours! I did use a small amount of leek, red onion and scallions in the mixture. Absolutely LOVED this recipe! No more having to buy from Sam's ! Thank you
Hi from Australia. I have never made spanakopita in my life (I'm 72), though I have eaten it !! I found this video, followed it exactly, and WOWSER....it was SO GOOD. The only difference in mine was, I had only bought 1 bunch of fresh dill, and as it was quite a strong flavour it didn't matter. Otherwise, thank you so much for the clarity of your instructions. My husband loved it, and as it's just the two of us, there was plenty to store in the freezer for later (and it freezes well).
Came here to see if it had the DILL. It does! Dill is essential. [One national brand of packaged spanakopita doesn't include dill. (If you buy it, sprinkle the dill on the top as you bake it. Thank me later.)] I thought I invented using olive oil for the fat - instead of butter. (Use butter for the baklava.) Of course I was delusional as olive oil would be common in Greece, and butter less so. The first few times I made this, I used butter. Then I decided I wanted a quick method to do this and used olive oil. Turned out great and it is the standard way for me now. Finally, reading the comments, in my experience garlic is NOT traditional, nor is lemon juice nor lemon zest (peel). I wouldn't use garlic - ever, makes it a different dish - nor use lemon juice - too runny. The lemon zest would not be a sin, but isn't needed. I saw that some said they added pine nuts. That is fine, but again, it isn't traditional. This is the REAL DEAL. Bravo, Dimitra!

How much ricotta is used in this recipe? It comes in different sized containers and I must have missed where she says exactly how much to use.

Hi there. I made this best SPANAKOPITA many times and it's DELICIOUS thank you. I tried the same recipe but making medium size triangles and no green onions and it's amazing !!!!! Love it ! The spinach is never overcooked and it's moist and crispy on the outside Just perfect thank you Dimitra

I just made this for the first time and it came out really well! Wonderful recipe. I didn't have the 1/2 sheet baking tray, so I used a big 14" castiron pan and it came out just as crispy and delicious.

I made this today and This is my MOST Favorite. I love all the dill in it. I did add 2 TBLS of Garlic but OMG amazing. Thank you Dimitra!!!! Thank you for sharing.
I made this but vegan. It was amazing. I used a mixture of soft and hard tofu, crumbled (2 cups), 2-3 cups Daiya cheese, 2 cups ground celery, 1 cup ground green peppers, 1tb black pepper, a pinch or 2 of cayenne, 2-3 tb soy sauce , one cup finely blended chickpeas, 4-5 lbs fresh chopped baby spinach. I did same way she did the filo and xvirgin oil but I used 10 layers at the bottom. Bake at 350 for an hr. or less.
if you want it vegan just do it with spinach and green onions and dill omit the rest ..I add mushrooms to my vegan (nistisimo) recipe

Unbelievable! I’d never made such a thing. I followed Dimitra’s video directions exactly and ended up with the most beautiful and delicious spanakopita. It was golden, juicy, and perfectly made. My guests were stunned. Any reservations I might have had about working with phyllo were all allayed by the result! When I pulled it out off the oven and set it out on the counter, it was met with oohs and aahs. And I made it! Thanks, Dimitra.

My YiaYia always had this made already so I have been trying to figure out her recipe for months. THIS is the closest I found, and WONDERFUL!!! My YiaYia passed away years ago (I am 53), but I just smile thinking about her while I am making and eating spanikopita. :):):) Thank you for your hints, like cutting it ahead of time! Now I know why mine was always making such a big mess. I am now teaching my own children how to make it like this; it is a clessic in our family.

I made this today for lunch in my restaurant, it was delicious and all who had it raved about the flavor I used fresh dill and added a few extra scallions the flavor was so fresh. The phyllo i used however did not have as many layers/sheets as yours did but i made it work I only had 2 sheets left to ruffle on the top, but it still came out beautiful

Absolutely delicious! I made it for a dinner party of eight this week, served it with fresh heirloom tomatoes and stuffed grape leaves. It was so good, I am making it for a smaller dinner get together tonight. Oh, and I tweaked it using a recipe from a Greek friend of mine by adding 8 oz of parmesan and using only 8 oz of feta. Superb!

I love Mousakka! I have looked and can't find it if you do.. My daughters worked at a greek restaurant throughout high school and he turned us on to it..he has since moved away and I've tried to make it the way he did but can't seen to find the right recipe..He had a sauce on top and layers I have used zuchinni instead of eggplant in season and my layers were more a mushroom cherry tomatoes sauce was so good....thank you

Made this with your Saganaki recipe. Wow this is so easy and not pre-cooking the spinach makes a big difference. Do not skip the instructions to add phyllo on top. It really does make it fluffy. We reheated the next day and it was just as crunchy. My mom did not want to share the leftover for other family members because she loved it so much. Thanks for sharing the recipe. My dad is diabetic and he ate this dinner and his sugar count the next morning was right on.

Oh wow! I tried this recipe tonight and it was delicious! I had another recipe which cooked the spinach until I found yours! I did use a small amount of leek, red onion and scallions in the mixture. Absolutely LOVED this recipe! No more having to buy from Sam's ! Thank you

Hi from Australia. I have never made spanakopita in my life (I'm 72), though I have eaten it !! I found this video, followed it exactly, and WOWSER....it was SO GOOD. The only difference in mine was, I had only bought 1 bunch of fresh dill, and as it was quite a strong flavour it didn't matter. Otherwise, thank you so much for the clarity of your instructions. My husband loved it, and as it's just the two of us, there was plenty to store in the freezer for later (and it freezes well).
Always make a 2nd tray for your self. This will disappear faster than your paycheck.

Came here to see if it had the DILL. It does! Dill is essential. [One national brand of packaged spanakopita doesn't include dill. (If you buy it, sprinkle the dill on the top as you bake it. Thank me later.)]
I thought I invented using olive oil for the fat - instead of butter. (Use butter for the baklava.) Of course I was delusional as olive oil would be common in Greece, and butter less so. The first few times I made this, I used butter. Then I decided I wanted a quick method to do this and used olive oil. Turned out great and it is the standard way for me now.
Finally, reading the comments, in my experience garlic is NOT traditional, nor is lemon juice nor lemon zest (peel). I wouldn't use garlic - ever, makes it a different dish - nor use lemon juice - too runny. The lemon zest would not be a sin, but isn't needed. I saw that some said they added pine nuts. That is fine, but again, it isn't traditional.
