    BAJAN PUDDING AND SOUSE (PORKLESS VERSION) - COOK IN MICROWAVE OVEN
    P.S.
    THIS IS WHAT BAJANS WOULD TYPICALLY EAT ON SATURDAYS. TRADITIONALLY IT IS MADE WITH PORK, STRIPE AND DIFFERENT PARTS OF THE PIG. USE WITH BREADFRUIT ON THE SIDE, UNFORTUNATELY IT IS VERY DIFFICULT TO FIND GOOD BREADFRUITS AT THIS TIME SO I OPTED WITH SOME ROASTED ONE THAT I HAD IN MY FREEZER. SO, FOR YOU ALL THAT DON’T EAT PORK, HERE IS ANOTHER OPTION.
    PICKLE INGREDIENTS
    3-4 MEDIUM CUCUMBERS (PREFERABLY SEEDLESS)
    1 CUP LIMES JUICE (FRESHLY SQUEEZE)
    2/3 CUP FRESH PARSLEY (ROUGHLY CHOPPED)
    1/4 SCOTCH BONNET PEPPER (FINELY CHOPPED)
    1 SMALL SWEET YELLOW ONION (FINELY CHOPPED)
    SALT TO TASTE
    CHICKEN THIGHS/BREAST (DEBONED AND CUT INTO CHUNK SIZE PIECES)
    SIDE:- BREADFRUIT (OPTIONAL)
    INGREDIENTS FOR STEAMED SWEET POTATO/PUDDING
    7 CUPS GRATED SWEET POTATOES (WEST INDIAN RED SKIN)
    2/3 CUP SCALLIONS (FINELY CHOPPED)
    1-1 1/2 TBSPNS FRESH THYME
    1 TSPN CAYENNE PEPPER
    1 1/2 TBSPNS MARJORAM (FINELY CHOPPED)
    4 OZS. SALTED BUTTER (SOFTENED)
    1/2 TSPN GROUND CLOVE
    1/2 CUP BROWN SUGAR
    SALT TO TASTE
    1 - 1 1/2 TBSPNS BROWNING
    1/8 CUP OF WATER FOR BINDING
    PREP CHICKEN
    SQUEEZE THE JUICE OF ONE A LIME OR LEMON AND 1 TABLESPOON SALT ON THE CHICKEN , LET SIT FOR 15 MINUTES AND RINSE WELL IN COLD WATER; SEASONED WITH A LITTLE ADOBO, GARLIC POWDER, PAPRIKA AND BLACK PEPPER AND COOK UNTIL TENDER; TRANSFER THE CHICKEN TO A BOWL AND SET ASIDE. WHEN COOL CUT INTO SMALL PIECES.
    BREADFRUIT
    CUT BREADFRUIT INTO ONE INCH STRIPS, PEEL AND WASH; IN A MEDIUM SAUCEPAN BRING WATER TO BOIL ADD A LITTLE SALT AND COOK UNTIL SOFT. WHEN FINISH COOKING TRANSFER THE BREADFRUIT TO A BOWL TO COOL; WHEN COOL CUT IN SLICES AND PLACE IN A SERVING DISH.
    (IF YOU USE THE BREADFRUIT; WHEN SERVING YOU CAN ADD A SLICE ON YOUR PLATE AND SPOON SOME OF THE PICKLE OVER)
    PICKLE
    IN A MEDIUM BOWL GRATE THE CUCUMBERS ON THE COURSE SIDE OF THE GRATER, ADD THE PICKLE INGREDIENTS AND MIX WELL TO COMBINE.
    ADD THE CHICKEN, GIVE IT A STIR.
    COVER WITH PLASTIC WRAP AND PLACE IN REFRIGERATOR TO MARINATE AND CHILL.
    PUDDING METHOD
    PEEL, WASH AND GRATE THE SWEET POTATO AND TRANSFER TO A LARGE MIXING BOWL.
    ADD ALL THE PUDDING INGREDIENTS AND MIX WELL TO COMBINE.
    TRANSFER MIXTURE INTO A GREASED BAKING DISH, COVER WITH PLASTIC WRAP.
    PLACE IN THE MICROWAVE OVEN, CHOOSE POTATO AND SET TIME FOR 13 MINUTES.
    **P.S. REMEMBER TO WEAR YOUR OVEN MITTENS**
    WHEN DONE STIR WELL, COVER WITH MORE PLASTIC WRAP AND REPEAT THE PROCESS UNTIL THE POTATO IS COOKED THROUGH.
    MAKE SURE NOT TO OVERCOOK.
    WHEN DONE LET THE PUDDING COOL FOR A FEW MINUTES.
    SCOOP PUDDING WITH AN ICE CREAM SCOOP AND SISE WITH THE PICKLE AND BREADFRUIT SLICES.
    ENJOY!!!!

    F.Y.I. If you do not eat pork then you don't have to miss out on all the fun. You can have the same satisfaction with this chicken version/substitute recipe. This is a traditional Bajan dish that we eat on a Saturday, I hope you enjoy this version and I want to thank you all for watching.

Perfect for those that do not eat pork. I definitely prefer the old way steaming it on the stove top but who has time for that now.     Hi Paulette, I learned something new today, making pudding in the microwave, I've never thought of that before but it's such a good idea wow. It looked really good thanks to hubby for grating the potatoes for you. My hubby use to grater for me but he would always complain so he bought me a food processer which graters everything within minutes. I know you are going to have a lot of help eating that.       Lol, I guess we both learned something new because I only learned recently from you that you can make it in the oven. Someone suggested to put a little more water in it so I will try it in the oven again with a smaller amount. But yes I was definitely pleased how it turned out and trust me, no offense to anyone but I did not missed the pork, in my opinion, you cannot tell the difference. What food processor do you have. I tried grating with mine but I think I need to purchase a finer disk; did not like how that turned out either, lol. Thank so much my Friend, I appreciate you, have a great evening. Xo

      Years ago and probably still now, people steam their pudding , sometimes I do that as well because it cooks faster, but as you saw I do it both ways however I will try your way of doing it next time. My food processor is a Hamilton beach, it grates my coconut and my potatoes

    If you are not using pork it is not called souse ,it is called for example pickled chicken wings etc.

      I don't eat pork and I made it with chicken, but with the chicken leg and thigh and it was delicious.
