    I remember my Dad going on fishing trips and coming back with bluefish. I never knew how my Mom cooked them, but they were awesome. I could never cook them to get them to taste good. I had all but given up, but I thought I would try one more time. I found your video and followed your recipe. THANK YOU!! It turned out so good. This will be my recipe and now I will be able to enjoy bluefish whenever I can get it.

      Thank you!!! Always a pleasure to hear these recipes actually work out and can be replicated - bluefish gets a bad rap but properly dispatched and taken care of they make great table fare. And the bigger ones are world class game fish that deserves more respect! Tight lines!

    Good to see a video about enjoying whole grilled small Bluefish. Bluefish has a bad reputation as being a trash fish. When properly processed they are very delicious especially the smaller ones..

      I agree, every fish has a unique flavor/texture...your job as a cook is to bring those out and know how what techniques to apply to different species.

    Awesome video, man. Sooo few tutorials on bluefish grill recipes. I’m an avid mass kayak fisherman, love to cook and grill, and love bluefish. Was curious to see how other people were grilling them, and just wanted some fresh ideas. Thanks buddy!

    Great! Like always, since I learned from you this technique (cleaning, paper towel, aluminum foil) it’s the only way I prepare my fish and it makes a HUGE difference... thanks for sharing...

      If you take care of them (bleed/ice asap) these smaller blues don't take that much work. I'll take a small blue over fluke/tog any day.

    Good stuff once again. I've got some perch fillets rinsed in saltwater, wrapped in paper towels and Al foil in the fridge right now. Learned a lot from your channel and my family appreciates it come dinner time!

      White perch. Takes a few to make a meal, but they're tasty little guys.

      Depends on the fish but with small blues it just works.

    This is awesome! Question for you...if I wanted to bake a bluefish prepped like this in the oven rather than over the grill what temp and for how long would you recommend?

      I'd go 500F and check after 3-4 minutes - put it under the broiler if you have to. Problem with oven is you have to turn the fish.

      Thanks Ed! Probably just a 500F oven, convection on if you have it. Check that weakfish video I linked in the description...I would stuff that body cavity and stand it up on a rack/sheet tray. Then you don't have to worry about flipping it...crispy skin all around.

      Nope! It's the same amount of salt that you'd normally use to season a whole fish, w/o curing it overnight. Whole fish, like a thick steak...will take a lot of salt to season properly.

    Since paprika is a very strong red pepper you should mention if you're usind regular or sweet paprika. Our mouth will be on fire if we eat the amount of paprikw used.

    Curious, What’s the purpose of cutting off the fins. So they don’t burn? Or just to fit the basket?

      In this case mainly so it doesn't burn, but it's generally considered part of "dressing" a whole fish in classical french cooking. Even if you were to say, salt bake a whole fish...you would trim the fins. Some insist on removing the eyeballs as well lol, which is a prudent thing if you were frying it since eyeballs can explode in hot oil.

    I would like a basket like that, the deep well basket hold the fish instead of smashing it like the clamp style. Followed your link, not the basket you have in the video.

    That’s the whitest bluefish I have ever seen. Bluefish can be quite good when handled and prepared properly.

      Yeah the smaller cocktails are perfect for this, but handling is paramount

      I keep the snappers to cocktail size, I throw back the gorillas. Big blues have a lot of that funky red meat. Smaller ones are delicious.
