      Jalapenos and various bell peppers. This looks amazing. Last weekend my oldest daughter visited for the first time in over 1 yr (covid). I made her your chicken fajitas came out really nice!!

    The paprika gives the fish a nice deep red color. I'm definitely going to try your fresh herb packet idea when I bake fish next ti!me.

    Great Video! Thank you for this. We were unable to find the smaller whole red snapper but one large one. It just fits in the basket (same one you used) I think its about 3.5 to 4 pounds. Will it still work? Any tips? How long should we cook it for?

    I have grilled yellowtail snapper before, it’s delicious.
    I want to try red snapper, but its population is under pressure and so it’s bad for the environment, so I will try this with another type of fish.

    Thanks Villa: I love grilling but didn't know the technique until watched your snapper video. I grilled a woeful snapper this Saturday on my birthday shredding the fish apart like a drunken sailor. Oh dear! Think I need a fish grilling basket.

    She is mistaken about why you want to score the fish. It’s more to make sure the fish cooks evenly. The tail section cooks much faster that’s why you want only 2-3 cuts and stop before the tail. Yes it helps to get flavor in the meat but it’s much more for the even cooking effect it gives rather than a flavor booster.

      Scoring the fish serves both purposes. The flavor is also important. She isn't mistaken.
