I have grilled yellowtail snapper before, it’s delicious. I want to try red snapper, but its population is under pressure and so it’s bad for the environment, so I will try this with another type of fish. Thanks for the recipe!
Thanks Villa: I love grilling but didn't know the technique until watched your snapper video. I grilled a woeful snapper this Saturday on my birthday shredding the fish apart like a drunken sailor. Oh dear! Think I need a fish grilling basket.
She is mistaken about why you want to score the fish. It’s more to make sure the fish cooks evenly. The tail section cooks much faster that’s why you want only 2-3 cuts and stop before the tail. Yes it helps to get flavor in the meat but it’s much more for the even cooking effect it gives rather than a flavor booster.
