Soft bread with pandan custard filling recipe | sweet 99%

    Recipe:
    Tangzhong
    40g bread flour
    200g water
    (mix before heating prevent lump)
    Whisk consistently while heating, then cool down and chill in the fridge at least 3 hours
    Pandanus custard filling
    10 pandanus leaves
    200ml water
    Blend and remove the pulp by strainer
    Get 150 ml of pandanus juice
    1/2cup corn flour
    3 egg yolks
    1/2 cup sugar
    1/2cup sweet condensed milk
    1 cup whipping cream
    Whisk
    (Strain and steam then)
    Add Salted Butter 2tbsp
    (Wrap and put in fridge)
    Add whipping cream1cup
    Dough
    (1)
    580g bread flour
    1/2tsp salt
    1/4cup dry milk
    (Combine and sift)
    60g sugar
    10g active dry yeast
    (Mix)
    (2)
    50g egg
    260g milk
    (Mix)
    Blend (1)+(2)
    Add the tangzhong and mix, then use mixer start by low speed
    Add 50g soft butter
    Until the dough get elastic, transfer to another container and wrap, dough
    When dough rise double size, cut and dough more 15 mn
    After that sprinkle and roll, dough for 1hrs
    Egg wash : 2 tbsp water+1egg
    bake: 150 degree’c for 25 mn

    hi? do you bake it again after kept in refridgerator? how many days can keep?

      After kept in refrigerator, for the next day we can have immediately when take from the fridge no need to bake more , In case need more soft, should let them cool down before eating ^_^
      Keep in refrigerator should not more than 3-4 days cause the softness will be decreasing ( I believe that you can finish in a few day since they are so soft and melt in the mouth>__

    What is the baking temperature and for how long?

      Baking: 150 degree c’ for 25 minutes, however depend on the oven , might set low heat first then increase the degree in last 5 minutes to make them gold ^__^

      1cup of cornflour approx 100g
      1cup of sugar approx 200g
      1cup of fresh milk approx 240g
      1cup of dry milk approx 120g
      ( approx: approximately ^__^)
