fyi - the Chinese use SQUARE won ton wrappers, so you can just cut them into squares. Round ones are great for POTSTICKERS (Chinese) or GYOZA (Japanese) dumplings. Decades ago, my sisters & I would help mom fold won tons on our green Formica table
I'm thinking that, while we don't like plastic, what's important is to keep air off the dough as it rests. Plastic wrap hugging the dough takes care of that. Just putting a plate over a bowl still leaves air around the dough.
I loooove mandu (the Korean word for dumplings)! The shape you used are actually one of the most common mandu shapes you can find here in Korea, although I prefer to make a "pleat" along one side when I make it from scratch.

You can make gluten-free Homemade Dumpling Wrappers by substituting gluten-free all-purpose flour for wheat flour. But note that they will be very delicate and could fall apart easily.

You can substitute the sugar in many recipes, except in those that require for sugar to caramelize like in homemade condensed milk. Most sugar substitutes only melt when heated, they don't caramelize. Caramelization is essential in recipes where sugar functions not only as a sweetener but also a stabilizer. Hope this helps.

I dont know about you but why would she put on gloves when she is making them for herself. Washing your hands really good and in between will do it. Why waste gloves. Why does it bother what she does if she isnt selling or serving it to strangers. Respectfully, please take ur negativity and go somewhere else. Im Nigerian and we literally eat the food with our hands. She is clearly working super clean and its up to her to tie her hair. If she want she can if she doesn't want it, she doesn't have to. Don't you have something better to do? You would get a slipper thrown at you if you told my Nigerian mom what to do while cooking.

Cover dough with moist tea towel and cut back on plastic. Using glass plate over bowl is also more earth friendly.

But I tried it and it works. The original dumpling recipe did not involve plastic.
