KALE CRUNCH SALAD RECIPE
4 cups of kale leaves, stemmed cut into ribbons
3 cups red cabbage, thinly sliced
4 carrots, chopped
1 green apple, chopped
1 avocado, diced
Dressing:
2 tbsp. extra virgin olive oil
¼ cup apple cider vinegar
1 clove garlic, crushed
1 tsp. honey
Salt and pepper to taste
Salad:
Combine all ingredients in a large bowl.
Dressing:
Combine all ingredients in a small glass bowl and whisk until well incorporated.
Assembly:
Pour the dressing over the salad and gently toss. Enjoy!!
Makes 4 servings (2.5 cups each)
Calories: 214; Total Fat: 13.4g; Saturated Fat: 1.8g; Cholesterol: 0mg; Carbohydrate: 26.5g; Dietary Fiber: 7.2g; Sugars: 10.5g; Protein: 4.4g
CHUNKY GREEK SALAD RECIPE
4 mini Persian cucumbers, chopped
1-cup baby tomatoes, quartered
1-cup garbanzo beans
¼ cup red onion, diced
½ cup kalamata olive, halved
Dressing:
2 tbsp. extra virgin olive oil
3 tbsp. balsamic vinegar
1 tsp. dried oregano
1 clove garlic, crushed
Salt and pepper to taste
Salad:
Combine all ingredients in a large bowl.
Dressing:
Combine all ingredients in a small glass bowl and whisk together.
Assembly:
Pour dressing over salad and gently toss. Adjust seasonings and enjoy!
Makes 4.5 cups (2-4 servings)
Nutrients per 1 cup + 2 tbsp.: Calories: 188; Total Fat: 11.1g; Saturated Fat: 1.1g; Cholesterol: 0mg; Carbohydrate: 20.6g; Dietary Fiber: 3.4g; Sugars: 4.6g; Protein: 4g
QUINOA BLACK BEAN SALAD
Salad:
2 cups cooked quinoa
1 cup black beans
1 cup red bell pepper, diced
1 avocado, diced
1/3 cup sliced scallions
Dressing:
2 tbsp. extra virgin olive oil
¼ cup fresh squeezed limejuice
1 clove garlic, crushed
1/8th tsp. ground cumin
Salt and pepper to taste
Salad:
Combine all ingredients in a large bowl.
Dressing:
Combine all ingredients in a small bowl and whisk until well combined.
Assembly:
Pour dressing over the salad an gently toss. Adjust seasonings and enjoy!
Makes 4.5 cups (2-4 servings)

I made the kale salad and it was legit amazing! The honey, the avocado and crunchy kale were the punch of the salad. It was soooo filling too. Dani is no joke, she knows her stuff. I have also made her tabouli quinoa salad and it's phenomenal.
She provided the full recipe in her description box for those of you who are concerned about the ingrediants and all that stuff but I will leave you with the calories for the 3 salads which are
Kale-Approximately 214 Calories
Greek-Approx. 188 Calories
Quinoa & Black Beans-Approx. 265 Cal

The kale salsa is amazing! I have had this for lunch several times and it truly does hold up in the fridge. The only thing I did different is leave out the honey as I am added sweetener free for 6 months. Keep these great recipients coming 😊
Thank you for sharing, I will try all three as I love salads! I am also a big fan of quinoa. I usually just squirt some lemon and s/p on my quinoa and it's delicious. I particularly enjoyed the goof real at the end.

I will be trying all the recipes but that Quinoa salad sounds so delicious! I've been working on learning how to eat clean now and I absolutely love your videos. I have been getting more exercise in my daily routine and most days i'm busy so this is just perfect. I love salads and this is something that I can definitely make time for. Baby kale is tastier. And you can get a pair of kitchen shears and cut it up really fine. Mature Kale is like eating Johnson grass.

Thanks, you snaved me from a boring, plain cup of cold quin oa. Just started a diet that requires a grain and I decided to make some quinoa to add this grain to my life. I literally sat down with fork in hand to eat the grain, when I decided to quickly find a salad recipe including it and found this youtube. This salad is refreshing and guarantees that quinoa will remain in my life.

A healthy fat is included in a clean way of eating. It's even a mistake to eliminate it from a weight loss diet. 2 Tbsp of oil for the amount of food it is to coat is not too much oil. Include a high quality EVOO in your ingredients and its also very tasty.

Paula Reilly and...they are?I'm not really seeing processed food in this video or something that would indicate unhealthy so to speak but then im not sure through what lens youre looking at this specifically.The olive oil is a good polyunsaturated fatty acid very beneficial but if you're worried it still only 2 tablespoons it seemed in each dressing and that for the entire salad. The apple cider vinegar is great for gut health which, in turn, will be great for your immunity since it's estimated that 70%-80% of your immunity is in your gut, which makes sense since it's where all the food and liquid from the outside world first go in the body.
Olive oil is very healthy for you...

I love your dressings, my salad is lettuce, red pepper (capsicum), grated carrot and four bean mix. For an extra treat some canned tuna and feta mixed in. It looks pretty and is delicious. Great in a salad jar with a small can of tuna for work.

I would like to try the salad with garbanzo beans because I have tried this but never added the garbanzo beans. YUM! Loved that tip of adding the garbanzo beans for the protein.
