I use to work for a brick oven pizza. We never used sauce. We used ground peeled whole tomatoes that were drained very well out of a # 10 can. Cheaper for the business and a 3 minute pizza is done. I love brick oven pizza. And of course butter and garlic on the edge.
I roll my crust on parchment paper and then use a peel to put paper and pizza on my preheated baking stone. My oven is at 550 when I bake them. Agree, homemade is the best! Happy cooking!
oh my word, yummy for a great day here in Michigan, when I worked at Tommys italy pizza in Chicago we werent allowed to have bubbles on the crust, he made us fork the bubbles while baking and add chesse to it for fanciness I guess but it smelled so good, thank you Renea

The pizzas look so yummy! It’s just me now and I cheat and get premade crust in the wile with the pizza sauce. They’re pretty good but not as good as homemade. I miss cooking for my husband and I freeze a lot of leftovers. I love your homemade mixes and the Mister! Take care.
You could literally sell pizza every Friday night and make a killing! Like 5:00-7:00, have a limit of 50 pizzas available at $10 just cheese and $1 each topping. Even make frozen pizzas for your market stand!
Pizzas look delicious!!! If you wanted to make the dough and use it the same day does it need to rise for 1-2 hr or is it better to put in the refrigerator to rise and use it 4-5 hr later?

I used to make pizza's with my Panasonic bread machine...dough setting. the problem was the crust end🍕, was like eating a half of a bagel for each piece! LOL
Was the pizza dough cold from the fridge when you rolled it out? The reason I'm asking is, my dough refused to roll out very well. I had to hand stretch them and had a hard time getting it thin enough. I need 12 inches.

Sincere question (sorry for Novel John and Renae and Comm.). How do you keep the pizza from having sand on the bottom, or ashes baked in? Like eating potatoes with out all the dirt off, or when you eat Clam Chowder, and you crunch on sand from the clam?
we wash the oven floor and there never gets sand in it. You do get a few ashes but then again it is wood fired. Come on down for a visit and you will see how we do this.

I'm diabetic and I always make my own pizza. I make the crust with whole wheat flour. It doesn't spike my blood sugar like the white flour.
