    I'm Thai and I've eaten nata de coco my whole life but never once have I questioned how it's made. I'm learning a lot from your videos.

    OMG, I love Nata De Coco but never in a million years would I have guessed it is the by-product of fermentation! haha thank you for the explanation. I might start calling it coconut cheese.

    We juice soy bean then cook it to make soy "milk", the we made tofu out of it.
    Now, we use milk to make "milk" tofu.
    The circle is complete.

    My mum actually mixes the milk with tofu milk and grinds up pandan leaves when shes making it. Its a great dessert to have with shaved milk ice as well!

    That tip about letting gelatin sit for 5-10 minutes before using is something I didn't know! That would definitely explain my failed attempts to mix it in similar recipes.

    Hoooraaaaay! I love Nata de Coco! ♥ The Philippines' halo-halo dessert is not complete without it.
    By the way, we don't have agar agar in our local groceries, can I just use normal jelly powder?
    I'll try doing this tomorrow, but I don't have a lot of toppings in hand..

    Friends from China used to make something like this but with almond extract and topped with canned fruit cocktail. They were freshly come from China -- maybe 2-3 months, and the fruit cocktail may have been because they couldn't get the fresh fruit they used at home. Or maybe not. ;) Anyway, it was delicious. I even have agar agar which I have never used, so this may be the time! Thanks

    Thai basil seed,I've seen it in bottled milk teas in asian supermarkets,and I've had fresh jackfruit that some asian supermarkets have,delicious,but getting the pods out is a lot of work.

    I've never knew Nata de coco or Woon Maprao, as we call in Thai, originated in the Philipines

    There's something known as "konyaku" jelly. It's vegan and has a bouncy texture. I think it would be a good substitute to gelatin.

    is it ok to use heavy whipping cream if I can't find whipping cream? And is it ok to prepare the pudding overnight?

      Hi Adam here and they actually came as a product with yogurt in them and she reused them :) ... otherwise I've had trouble finding them myself :) Cheers!

    why do you always use powder gelatin? Can we use the normal unflavoured gelatin that disolves in water just to save some time?

      They never go bad for me. I just pour the whole can of condensed milk(sweetened) into a reusable plastic container then put it in the fridge.
